For me it was Redneck Rampage on the PC. Coincidentally it was also my first 'real' foray into PC gaming (SimCity and Tank Wars not withstanding). The first game that made me go "ah man that's nasty" was probably Gears of War chainsaw kill.

I very seldom cheat (actually probably not at all since cheats often disable achievements on the 360). The only thing I might do is reference a guide if I am stuck on something. The GTA series on the PC, I would often use cheats the second time through just to experiment.
