A lot of people have already mentioned it but Europa Universalis III. The wealth of content is staggering, over 400 years of diplomacy, trade and war playing as any nation throughout the world. All it needs is more stable multiplayer and it'd be perfect.

PC was a good choice, you can end up putting on a lot of weight getting a car and not walking anywhere.

Sid Meier's Pirates 2, first game was great but not deep enough. If they added more interesting features (like whaling? Just a suggestion), online, and a radically improved plot then it would be amazing. Edit: And no more bloody Baron Raymondo

Hearts of Iron III (and most other Paradox Interactive games), those games are damn good once you get your head around them.
