I'm kinda surprised that the screenshots and article implies that the games will be greyscale only. The original games were compatible with the Gameboy Color, which means there is some color data in there for them to use to make the game prettier. It's not much, but better than greyscale.

EB Games here in Australia (A division of Gamestop) has been doing this for months now. Don't recall seeing them actually selling iDevices, though, so still amystery as to what they're doing with them.

What it really needs is a turning animation. I don't recall any sharp turns in the trench, so I don't know what that would look like, but right now it's just a 'distance to destination' counter.
