I only beat one of the dragon priests in Skyrim who would one shot me with some of his spells by running out the door to heal. This only worked because I had put a mana draining bow on my companion and by the time I had healed and everything he couldn't cast back at me.

Since everyone has already mentioned some good advice, I'd just say read all the orange signs you can, and if you ever see one that says "Beware of chest" or similar attack every chest you see before you loot it. It will save you a lot of frustration if someone was trying to warn you about a mimic.
