Living Sacrifice - The Hammering Process.

They were playing the music that is todays generic metalcore. Only they did it over 10 years ago. And it was way heavier than todays metal.

The album cant really be classified beyond "metal". It has elements of death, hardcore, metalcore, thrash, speed etc... All rolled into a blisteringly magnificent album.

Well it depends on the metal genre and there are so many.

Thrash:
Megadeth - Rust in Peace
Pantera - Vulgar Display of Power
Metallica - Ride the lightning

General Metal:
Down - NOLA
Tool - Undertow
Corrosion of Conformity - Deliverance

Black Metal:
Celtic Frost - To Mega Therion
Darkthrone - Transilvanian Hunger
Emperor - Anthem to the Welkins at Dusk

Deathmetal:
Gorefest - Mindloss
Carcass - Necroticism
At the Gates - Terminal Spirit Disease

Doom Metal:
Evoken - Antethesis of Light
diSEMBOWELMENT - Transcendence Into The Peripheral
My Dying Bride - Turn Loose the Swans

I'm sure I'm missing a bunch but these stand out.

All my favourites have already been voiced by other people, I'll just add one more here;
Eluveitie - Everything remains(as it never was)
And
Eluveitie - Slania

They aren't a purely metal band, but that is where their focus is. They're a "Folkmetal" band. Bagpipes, flutes etc together with your classic drums, guitar and growling. Ace.
Look up in particular; Thousandfold, Grey Sublime Archon, Inis Mona and Everything remains(as it never was). All found on youtube.

Toxicity. God it's old, yet I still listen to it just as much as any of my newer interests.

Oh, and Dethklok!

Wooo.

There are no "bests," only what you love. I'm not much of a Metallica fan anymore but I'm still listing Master of Puppets in my list because it was influential to so many people, including myself. I'm also not listing anything by Black Sabbath, I think that's a given for any self-respecting Metalhead. I'm definitely in the old-school camp here too but there are a few newer bands listed that really stand out to me... my taste in Metal runs the whole gamut pretty much.

NWoBHM:
Saxon - "The Eagle Has Landed"
Iron Maiden - "Seventh Son of a Seventh Son"
Savage - "Hyperactive"
Running Wild - "Victory"
Judas Priest - "Screaming for Vengeance"

Power Metal:
Helloween - "Keeper of the Seven Keys part II"
Gamma Ray - "Land of the Free"
Metalium - "Millenium Metal - Chapter One"
Yngwie J. Malmsteen's Rising Force - (Self-titled debut)
Sonata Arctica - "Winterheart's Guild"
Nocturnal Rites - "Grand Illusion"
Steel Prophet - "Dark Hallucinations"

Progressive Metal:
Queensryche - "Operation: Mindcrime"
Fates Warning - "Night on Brocken"
Dream Theater - "When Dream and Day Unite"
Shadow Gallery - "Tyranny"
Exhibition - "The Sign of Tomorrow"

Rock/Metal Opera
Savatage - "Hall of the Mountain King"
Symphony X - "The Odyssey"

"True" Metal:
Manowar - "Kings of Metal"
HammerFall - "Renegade"
Sacred Steel - "Wargods of Metal"

Shock Rock/Metal:
W.A.S.P. - "The Crimson Idol"
Lizzy Borden - "Visual Lies"
Alice Cooper - "Constrictor"

Glam/Hair Metal:
Motley Crue - "Shout at the Devil"
Stryper - "To Hell With the Devil"
Bon Jovi - "7800 degrees Fahrenheit"
TNT - "Everyone's a Star"
Poison - "Look What the Cat Dragged In"
Whitesnake - "Whitesnake" (Self-titled)
Lita Ford - "Lita"

Thrash/Speed Metal:
Megadeth - "Peace Sells... But Who's Buying?"
Anthrax - "Among the Living"
Metallica - "Master of Puppets"
Armored Saint - "Symbol of Salvation"
Metal Church - "Metal Church" (self-titled)
Sanctuary - "Refuge Denied"
Agent Steel - "Skeptics Apocalypse"
Stormtroopers of Death - "Speak English or Die"

General Heavy Metal:
Dio - "Holy Diver"
Quiet Riot - "Metal Health"
Def Leppard - "Pyromania"
Dirty Looks - "Cool From the Wire"
Aldo Nova - "Aldo Nova" (self-titled)
Twisted Sister - "Stay Hungry"
Guns N'Roses - "Appetite for Destruction"
Melidian - "Lost in the Wild"
Bloodgood - "Detonation"
Girlschool - "Running Wild"
Warlock - "Triumph & Agony"
Grim Reaper - "See You In Hell"

Doom/Black Metal
Danzig - "Danzig" (self-titled)
Samhain - "November Coming Fire"

I'll stop there before this list gets out of hand any further. Honorable mention to Led Zeppelin for being a defining influence on many later Metal styles.

This, just this. They are amazingly captivating live and this album tells a great story.
This is my favourite metal album, but, I know a lot of people would disagree, so, here's some more. I'm not gonna name the obvious Slayer/Slipknot/'tallica ones, so here's some obscure ones to check out.

Electric Wizard: Dopethrone (Stoner Doom)
Every Time I Die: The Big Dirty (Hardcore)
Burzum: Filosofem (Black Metal)
Sleep: Sleep's Holy Mountain (Stoner Metal)
Rammstein: Reise, Reise (Industrial Metal)
Lamb Of God: Sacrament (Very underrated. Melodic death/groove metal)
Mastodon: ...everything this band has done is amazing. So, yeah, just go get their back catalogue. (Sludge/Progressive Metal)
Melvins: Houdini (another underrated band. Stoner/Sludge metal)
Fear Factory: Demanufacture/Mechanize (latter only came out this year, but it slays. Industrial/Speed metal)
Karnivool: Themata (Apparently like an Aussie Tool. I don't listen to Tool, so, I'll take the press's word for it. Progressive metal)
Gama Bomb: Tales From The Grave In Space (Kick-ass underrated Irish thrash band. Only released last year, but still awesome. Classic thrash/speed metal)

Heavy metal
Paranoid - Black Sabbath (Can anyone say the most influential metal album ever?)

Thrash metal
...And Justice for All - Metallica
Ride the Lightning - Metallica
Master of Puppets - Metallica

Math metal
Colors - Between the Buried and Me

Jazz-fusion metal? (Not quite sure what these guys are, but they're awesome)
Carving Desert Canyons - Scale the Summit

I know it seems like I'm a huge Metallica fan, but I'm a bigger fan of BTBAM and Scale the Summit, to be honest. Anything with an odd time signature and I'm sold.

A Predator's Portrait - Soilwork
So much better (imo) opinion than their later work. It's the way they were meant to be heard.

Dethalbum II - Dethklok
The album that made me take them seriously as a band, truly some great death metal in there.

Lateralus - Tool
Demanufacture - Fear Factory
From Mars to Sirius - Gojira
As the Palaces Burn - Lamb of God
Leviathan - Mastodon

Don't make me choose between them.

Octavia Sperati - Grace Submerged
Oh wow, you're the first person I've ever run into online [small](that was not posting on a page specifically about Octavia Sperati)[/small] that has ever indicated they'd heard of them, let alone put the sublime Grace Submerged on a best album list. Kudos!

I take issue with that massive list full of quite a few bands I like, because it includes no Ayreon! Seriously, how could somebody with your apparently vast knowledge of and appreciation for metal leave say... The Human Equation out of the Rock/Metal Opera section? Fie on thee!

[small]If you genuinely do not know about Ayreon, you should really remedy that ASAP.[/small]

Iced Earth - Everything!
Elvenking - Heathenreel (Folk Power Metal. My fav. folk metal album.)
Blind Guardian - Somewhere Far Beyond
Demons & Wizards - Touched By The Crimson King (If you haven't heard it and like great musicianship, give it a listen. It is amazing!)
A resounding "Hell yes!" to all of those, though I think I like one of Elvenking's other albums a tad bit more than Heathenreel (not entirely certain on that point though, I shall have to go re-listen to them and check).

On Topic: Oh man, I couldn't even begin to pick a "best metal album", I like way too many, so as a cop-out I'll just go with the best metal album of 2010, which I think The Never Ending Way of ORwarriOR by Orphaned Land is a shoe-in for.
