I'm partial to the Morrowind soundtrack (especially the main theme, HELL YES), but that's probably because I've got a lot of nostalgia associated with it. Anything composed by Jeremy Soule is bound to be good.

I know I'm not going to shut up about it, since I seem to be the only person on this site who got the game, but a bunch of the themes in Sengoku Basara: Samurai Heroes are pretty dang good and catchy. Masamune Date's and Ieyasu Tokugawa's standing out the most though.
