Yesterday and today, I've noticed that occasionally, the last couple of tabs on Chrome disappear, then reappear when I open a new tab.

What do I do about it?

Whatever, just wash your hands.
I had that issue with Brave, which is also chromium based, but it was because I have too many tabs open so if I open a few new ones they might not show up till I close some, or make the window bigger.

Maybe you're running out of RAM? I have 16 GB of RAM and over 60 tabs open in Firefox (no joke) and task manager says 4.7 GB of RAM "in use" and 7.8 GB "committed". I do have a Ryzen APU that uses 1.5 GB of RAM according to "dxdiag". If you have at least 8 GBs of RAM and you're just surfing the internet you shouldn't be running out of RAM. You can even do quite a bit with just 4 GBs of RAM if you debloat Windows.

Switch to Firefox.
