Usually a drink is more associated with a mouthful or a few seconds of drinking a beer/mixed drink. The new contracts mean that these new contributors only get a percentage of their own ad revenues, not a flat fee. Therefore the Escapist doesn't lose anything on adding new shows. Also, if you don't like the show, watching it and commenting it gives the contributor money to do more shows.
