It's too hard of a decision, so I'll sum it up with 'any' boss that Nintendo developed.

The bosses might as well be have a bull's eye target painted on them, with nitroglycerin, with you having a bazooka that lauches Bruce Campbells as a standard weapon, and the Bruces have lighters, and a pregancy craving for nitroglycerin .
Well you, get the idea.

Please use the search bar. My vote would go to Bebop and Rocksteady from the TMNT NES game, Bebop just keeps running into a wall while you hit him, while Rocksteady can be easily beaten by Donatello jumping on some blocks where Rocksteady can't reach, and using his Bo to kill him. The rest of the game is hard as hell, but these guys are just jokes.
You must not have played the TMNT games for the Gameboy. 'Cause the easiest boss is clearly from there: Rocksteady. Spam B and he goes down without ever hitting you. You don't even need to look at the screen.

The Gorgatron in Moon Master. At the time I thought I was just supremely awesome, but looking back, I get the feeling that it was made intentionally easy, purely as a gimmick to sell me cheap plastic toys.

I'm not even sure if it's possible to lose to that boss.
I think the word "boss fight" is a little too generous for that one.
No, it was more like... aim at the glowy thing using you space laser and watch the explosion. Seriously, Michael Bay couldn't have produced a more explosion-happy ending to a game.

Neverwinter nights.
At least when palying as a paladin. On hard difficulty it was a straightforward beating(a walk in the park on easier levels). I didn't even have to resort to healing potions.

I have to agree with the OP, it is and always will be "Mysterio" fro
Spiderman 2. I dunno if you could even call it a boss fight.

The last boss of Ninja Gaiden.

Sure, compared to most other games it was still a tough-as-hell bossfight, but it's only slightly more difficult than the game's FIRST boss fight, and after all the fights in between (particularly the last 2 leading up to the finale) the last fight was pathetic.

Lucian, from Fable II or Volf from Ninja Gaiden II. I beat the former by shoting him once (and again by sitting idly as Reaver plugged him) and the latter by running up a wall and mashing Y a few times. Piss. Easy.

Darkness Jackie from The Darkness. You have to put your guns away and not attack.

Kyle Katarn from Mysteries of the Sith. You have to put your lightsaber away and not attack.

Halo 3's Guilty Spark.

Just avoid the red beams, pick up laser, hit him 3 times, done.

Maybe still that guy from Area 51, just strafe that he doesnt hit you and
keep firing.

you cant really lose that fight. it wasnt meant to be a boss fight from what i've heard. it was more like, a cinematic ending. i think the official boss from it was the 2 fights (flying and not) with skorge

I'm going with Lucien from Fable 2.
Fun fact, I actually DID get killed by the last boss of Gears of War 2 one time. I wasn't paying attention to the screen and didn't realize the fight had started and it ate my helicopter.

Of some reason I found the bos of Mass Effect to be disturbingly easy.
