There are more, but I don't want to get too carried away, and they are the first ones that spring to my mind.
Black Butler's opening, I love it, I also love how they don't really change the opening mid season but just use the same song but the verses they didn't use the first time round. The visuals are pretty good but I think Soul Eater's far exceeds it. Still good.

I have never seen Soul eater, but I have heard good things about it, I am going to have to check it out sometime.

There are several great ones, but Serial Experiments Lain wins this handily. It's absolutely beautiful. Here's the video, and a link to the full acoustic version (which is somehow even better).

Narutaru has the single greatest troll opening in history. The actual story is basically pokemon meets Neon Genesis. The opening even managed to get the show past the sensors in a few countries. The manga is much better though:

Honorable mentions go to Ghost in the Shell and Elfen Lied, for their gorgeous soundtracks, and Samurai Champloo, for its gorgeous animation.

SHAFT are without a doubt the best makers of openings. Here are my top five favourites from Sayonara Zetsubou Sensei: The Power of Negative Thinking, by Kouji Kumeta. All of the openings themselves are animated by Gendaku Inu curry, who do various odd jobs around the anime business. Knowing my amaing programming skills, I'll leave the ULRs.

Here, the song sings about a man trying to get a rumba. Naturally, i's all a metaphor (it's a manga about a pessimist falling in love with an optimistic murderer... what do you expect?). (http://www.youtube.com/watch?v=frMPayj2KgU)

Openings:

Evangelion and Serial Experiments Lain both have great openings. Fate/Zero's first opening was good as well. And of course, the first Bleach opening makes it in purely due to nostalgia.

As for endings, Madoka Magica's wins handily. Ain't even a contest.

Anyone remember this one, Out of all the Pokemon Openings, this one is my favorite, followed by the original, I like this one better because it sucks me into the world, makes me want to go in a little more and have an adventure...good times....still want to know what ever happened to Brock with Professor Ivy though....

Well I really like Arpeggio of Blue Steel's opening. It's got good lyrics and a strong belt out chorus phrase.
I really like Gundam Wing's opening. At least the lyrics. The lyrics are quite sexy in English, buried under ridiculous 90s pop with needless backing. If this was a solo, more melancholic song, it'd totally be what I'd want my wife to sing for "come hither". But my favourite translation, the one on my DVDs, can not be found on the internet apparently.
Just know that the chorus is "I want to show you my undying love with my entire body tonight"
Penguindrum's opening was great. So energy filled yet so melancholic, tons of orchestra. And the lyrics really hit when you hear "Sorry, I have the feeling we won't meet again".
But youtube hates that opening so here's a slightly sped up full version.

Sunday Without God's ending better be good, since they seem to plan all the shows only plot points around this song starting just to try to force emotion.
I love Baka and Test's first ending. All of their openings and endings flood you with intense colour, but this was also has cool designs for the male characters, and the song is so fun, fitting, and quite hilarious when you know the lyrics.

My favorite intro by far is the intro for Monster, and then the intro for Cowboy Bebop.

All other anime intros I've seen are laughable (to me at least). I usually skip them.

I understand that's it the norm in this industry to put japanese pop music as intro titles, but I really don't care for it.

Yeah, I didn't even realize that till after I posted it and watched it all the way through.

Gotta go with Gurren Lagann as my favourite opening ever. There are some other ones that came close, like both openings for Jojo's Bizarre adventure but Gurren Lagann has such an amazing opening.


As for ending its close between, surprise surprise Gurren Lagann for its ending after the timeskip. But I think that Elfen Lied is my favourite out of any of my top endings.
