It can only be small stuff that has no effect to the overall gameplay but you enjoy :
Like.. in grand theft auto IV when your phone is about to ring and the sterio in your car beeps like in real life

my favorite thing is when they say the name of the game inside the game

Total War series. Getting the choice to exterminate, capture, or enslave a conquered city.

When I would watch the cutscenes in Ninja Gaiden in both English and Japanese, an get to see the lip movements change with the language, I always thought that was awesome.

My favorite one was in Call of Duty: Finest Hour. You were going through building killing Nazis when if you went off to the side and entered a closet you'd find a teddy bear. You'd also see "PRESS _ TO PICK UP BEAR". If you did, the screen went "the bear is adorable". Nothing else would happen. It's awesome.

The bazillions of easter eggs in Halo 3 are pretty cool, I think. Also, the Domo in Gears 2 (which I can't find a picture of right now) is hilarious. I did find one of the hat trick, which does this after you shoot a few hats on the side of the road: http://farm4.static.flickr.com/3062/3108154092_51629437a2.jpg

Doom had some good ones. Selecting the "Nightmare" difficulty would give you a message saying "Are you sure? This skill level isn't even remotely fair." (Which is SO true) Even better is when you try to use cheats on that difficulty, and the game says "You're too good to be cheating!"

I really like the aesthetics of certain areas in MMOs, like Croatoa in City of Heroes or Loch Modan in WoW. They're like pleasant vacation/hangout spots.

That easter egg in Halo 1 where you flew up to some high area on a building in a Banshee and stood in a particular spot and it played different music.

I thought that was so amazing at the time...

The Space Quest games are the best ever for this. My favorite was Space Quest III. This game included a menu option called "Boss Key." (This game had menu buttons across the top of the screen, labeled File, Edit, Etc.) When you hit "Boss Key," the game berated you for playing the game while you were at work and refused to give you an excuse to give to your boss. There were other little homages - the Starship Enterprise warps away from Monolith Burger (a combination of McDonald's and the monoliths from 2001) the first time you arrive, you get chased by a terminator, and the scrap in the garbage frigate includes a TIE fighter, Optimus Prime's head, and the nose cone from the spaceship from the Tintin "Explorers On the Moon" story.

EDIT: my favorite easter egg ever is probably from Max Payne. There's a level - I think it's when you're chasing Vinnie Gognitti - when you get on an elevator and this really awful elevator muzak starts playing. The speaker is in the top of the elevator; if you shoot it, Max thanks you exasperatedly.

In Fallout 3 and Oblivion, I really enjoyed dropping interesting items around my house, then picking them up, and maneuvering them so as to decorate the house. Was this a complete waste of time? Probably, but that didn't stop me. And my houses in both games do look pretty cool now.

all the best ones i can think of were in fallout 3 because they had so much great stuff that didn't really effect the gameplay...you'd have to look for it though...like skeletons draped over toilet bowls with half a dozen empty bottles surrounding it...or all the little side stories found in computers...not really easter eggs...not really anything of consequence...just little things...bioshock had some good stuff like that too...really made the environment so much more immersive

In Hitman: Blood Money when you shoot someone in a chicken costume, all these little feathers fly out of it and float to the ground. All of the hidden stuff in that game was cool.

All the various easter eggs in WoW were quite fun. Off the top of my head, one Zeppelin master goblin was called Hin Denburg.

My Fallout 3 Megaton house was like a museum.
First room was full of stuff from Nuka Cola trucks to chip cards found in metros.
Box of 8 pool balls and on and on and on. That so makes gaming better.

The tiny details in WoW's enviroment aren't important gameplay-wise, but they really help a great deal in setting the atmosphere. Think of flowers in Duskwood being overrun with vines, things like that. They're small, and most of the time you barely notice them, but all of them combined together makes for a brilliantly detailed and immersive game world.

I like finding humour in places that humour isn't necessary.
Reason I loved Portal so much
And things in Fallout 3 (ie: Photons have mass? I didn't even know they were Catholic!)
Those little jokes that you could easily miss make me laugh the most
