SKYIRM!
Lol just kidding that was too easy even on master
I liked the crash bandicoot way of fighting bosses, where you have to do certain things and such
Also the Elite 4 leading up to the head guy in Pokemon

I had a lot of fun with Tali's loyalty mission in Mass Effect 2 (the boss being a giant Geth) when I was playing as Infiltrator on highest difficulty setting. But it would've been frustrating to kill it if I didn't bring Legion with me.

Interestingly enough I've been playing the Jedi Knight games recently. Lightsaber duels are immensely fun in the latter two games, especially when they become very intense and fast-paced. I haven't had so much fun in ages.

Some of Dragon Age's are great. The Archdemon is a BLAST to fight, and so is the Ancient Rock Wraith from DA2.
I agree with the wraith - that was tense. But the Archdemon? A slugging fest - I got very bored of that fight, very quickly.

Mr. Freeze

Just... so... good.
I'd have to agree - a boss fight that got you to be creative with the game's mechanics. I enjoyed that one a lot.

Max Payne 2's was legendary.
The last one? Really? It was alright, but that's as far as I'd say for it. There was nothing that really stood out.

Metal Slug (on PS1) was epic.
I've always enjoyed the Metal Slug boss fights, especially the ones where the boss (especially if mechanic) degrades constantly as you attack it.

Funny noobs.
I think it's going a bit far to call people noobs for thinking the boss fights weren't well done. None of them particularly stood out to me for one, though I did like the setting for the second-last one.

I would also say that they weren't the right kind of challenging. I like bosses that require effort to defeat, but these kept requiring brute force more than anything else. It wasn't challenging, it was "how many bullets can this guy soak up before they die?" For the first I just fired rockets at them and tried to blow them up as much as possible. For the second, I sprayed bullets, same with the third. At the same time people playing a Dues Ex game prefer something that involve you defeating the boss by exploring alternative options, for instance the way you can defeat Navarre and Gunther Hermann.

I used to keep replaying all the boss fights of Crash Bandicoot 3 - I really enjoyed them. Not sure if I still would now since it's been so long, but I always enjoyed fighting N. Gin.

Castlevania: Lords of Shadow!

Lots of variety in the bosses, big, small, vampires, werewolves, weird shovel guys. You name it.

Sonic Generations, hands down. Particularly the rival duels. Metal Sonic isn't as teeth-grindingly infuriating as in Sonic CD, the battle with Shadow has epic music switches, and Silver's... well, let's just say it far from sucks this time around.

For me it's Atelier Iris 3, with the battle against the Final Boss and another battle against Ash rating the highest. The Ash battle is exceptionally droolworthy.

KotOR II -- Darth Sion
Dragon Age: Origins -- Archdemon

Epic battles, Sion cause it's as much psychology as actual fighting, Archdemon cause that's a bloody hard fight!

terraria, have you seen the shit they throw at you?
They're not really that difficult. Most just require planning and preparation.
i never said hard, they're just awesome
The old ones were meh, but the new ones are really fun to figure out how to kill.

A lot of planning and preparation, though.

To face the Wall of Flesh Solo, you'll just about want to make wooden platforms across the underworld, flood the underworld even though it evaporates, just so a layer will of lava will turn to Obsidian and not be a danger to you. Get a pair of Rocket boots and Cloud in a Bottle, invest in buying a Minishark, invest in turning a Minishark into a Star Cannon, a Demon Scythe spellbook, hundreds of ammunition for your Minishark or Star Cannon(or hopefully both), all the hellforge items(that includes a boomerang), loads of restoration potions, max health and mp, an ironskin potion, a magic potion, and an Obsidian Skin potion, just in case you didn't build enough bridge.

And it's STILL possible to die. Especially if you don't manage to multitasking keeping both your HP up and keeping distance from the Wall of Flesh at the same time. (You get cornered, you get lots of damage, it's best to keep no pillars hung up high in the sky. Take those Obsidian bricks and add them to your home, and take those hellforges and put them in your home once you get the Molten Hamaxe. You don't have to worry about them being melted in the lava if you make a mistake, and you don't have to worry about those towers jutting into the sky getting in your way)

And all of this preparation takes loads of hours to accomplish.

Personally, I recommend a sandgun. Because sand is the easiest ammunition to get a hold of. But that costs a lot of money to make. If one actually cares to earn it, the quickest way I've found is to face loads and loads of earth eaters and sell their remains. About 20 worm foods should be plenty prepared to have a boss rush and afford the illegal gun parts.
I remember the first time I went up against the wall of flesh. Drank all the necessary potions, unloaded 150 stars with the Star Cannon... then died! I was pissed! I took me quite a while to gather those stars. Ended up killing it using a Molten Fury bow.

Metal Gear Solid in which you have...

The round-n-round cowboy shootout
the man vs tank battle
the Ninja fight
Psycho Fucking Mantis
The sniper battle
Man vs Hind
Sniper Battle part 2
Metal Gear itself
Final battle: fist-fight atop flaming ruins
epilogue: driving off on a jeep with a mounted LMG

Considering the fact that Solid is supposed to be a stealth game, the boss fights are balls-to-the-freaking-wall.

Also Lou. Playing Guitar Hero 3 and having a Guitar Battle against Lou to Devil went Down to Georgia was freaking awesome...on medium and easy that is...on Hard and Hard 2.0 it's just unfair...
