I'll give you credit on the source, though I would like to mention he said "The high level models are about the same quality as the stuff we made on the PlayStation 3". This could mean anything between complete CGI or in-game footage, and again, I want to see for myself. How a statement like that was not newsworthy here or anywhere else I've seen I don't know.

As beautiful as Uncharted 2 is (and it is a fantastic game in all areas) I played it front to back and didn't see much in it at all that I think wouldn't be possible on the 360.
My brother has two books on the art of Uncharted 2 and Gears Of War (arguably the most visually attractive games on both systems) and there is very little difference in the quality of the character models and renders; they are both of a phenominal standard.
On analysis, Uncharted 2 has a really far (and impressive) draw distance which might not be possible on the 360; but the 360 seems to be better at keeping a stable frame-rate. There's not much else I can think of. The rest just boils down to lazy programming I think.
