First, before anything, watch the original/read the original. There are many, many variations, so be sure to watch the old one, then the old OVA's and movies, and then the new OVA's.
Alright, now that that's taken care of, Evangelion isn't truly focused on the giant organic creature/robots known as Eva's (they are technically bio-organic, being both organic and machine at the same time). It's more focused on the relationships and mindsets of the characters; Shinji's cowardice and desperation for both his fathers approval and a safety;, Rei's emotional neutrality and her what her final destiny is; Asuka's pain and tragedy in her life and how she's reacted to it; Misato's life; and so much more. The robots are more of a backdrop; they were specificaqlly designed to be sleek, organic, and creature like to evoke actual emotion about them, instead of just "Giant robots are awesome."
Also, the entire anime is essentially Freuidan Psychology in the form of Pseudo-Christian imagery (battles with giant monsters called angels, dealing with the creation of humans, the nature of god, etc).
It gets really trippy at the end.
After you have watched the anime, partake in the OVA's, the movies, the variety of manga, such as the original, the spin off called Angelic Days (the entirety of which is inspired by a brief interlude in the original), other manga I can't remember the names of, and the new series of OVA's (such as You Can (not) Advance, which retell the original story, but take out some of the excellent pacing and story and replace it with better animation, redone voices, and more focus on the robots fights... and new characters, which pisses me off, but whatever.
