I've never been big on anime, but I recently decided to give it another shot.
The thing is I have quite a low tolerance for "weird shit" (for lack of a better term), which makes it hard to find anime that doesn't get on my nerves after a while.
I was just wondering if you guys had any recommendations for "serious" anime (also for lack of a better term) that manages to avoid common anime tropes like gratuitous fan service and seemingly schizophrenic characters.

Here's what I've tried already, and what I thought about it:

Death Note - One of my favourite animes, even though I really hated the "Misa-Misa" character; was cleverly written with interesting characters and a cool premise.

Ghost in the Shell: Stand Alone Complex - Pretty good, though there was too much expository dialogue for my liking, especially amongst the annoyingly out-of-place cutesy robots. Also, it was hard to take the Major seriously as a badass military commander when she constantly dressed like a stripper.

Cowboy Bebop - This is what got me back into anime after a long time. I thought it was really cool, with its bluesy atmosphere and subtle character development. Although Faye annoyed me in almost every possible way; even the character herself seemed to realise her only real purpose was to wiggle her bum in front of the camera.

Trigun - I watched this because I heard it was similar to the above. I found it bearable at best. The world was dull and none of the characters made sense in their motivations or choices. Every single thing that happens is unrealistic and contrived, without any kind of clever writing to back it up. It was just "Rule of Cool" gone awry, and I found it a bit sophomoric.

Baccano! - Similar to Trigun, very little makes sense. Which is compounded by the crazy non-linear story-telling. Although that was interesting to watch unfold, and I understood the sequence of events by the end, I just don't understand the point. I didn't really identify with any of the characters, who all seemed insane in one way or another, and the story just seems to meander around without any kind of unifying theme or over-arching goal. I didn't actually mind Isaac and Miria... maybe my tolerance for bullshit anime antics is increasing.

Code Geass - Currently watching this. It's very enjoyable, especially the second season. Reminds me a lot of Death Note. But goddamn, they never seem to miss an opportunity to have the principle female characters get naked, or frame an upskirt camera angle, even when they're in the middle of a battle you're supposed to be taking seriously. It undermines both the characters, and the themes, tone and tension of the whole show when important characters are gratuitously sexualised to such a ridiculous extent. Imagine if Walter White from Breaking Bad was constantly surrounded by schoolgirls in miniskirts flashing their panties at the camera... it would not be the same show. It just ruins it a bit for me.

Other anime that looks interesting are: Gantz, Berserk and Elfen Lied.
Possibly Neon Genesis Evangelion too, though several people have tried to talk me out of bothering with that series.

So, know of any other "serious" anime?

Edit: Oh yeah, and do mention whether the dub is decent or I should watch it subtitled. Nothing turns me off quicker than goofy, bad voice-acting.

Huh, I would have thought Fullmetal Alchemist had stuff in it that would be deemed 'weird shit.' Anyhow, I recommend Afro Samurai because Samuel L. Jackson. If that doesn't convince you, hopefully this [http://www.youtube.com/watch?v=HykZmVBylrc] gratuitous fight-scene does.

EDIT: How did I forget Monster <.>.

Don't. It's gorn and nudity. Think 90s comics and you'll get a good idea. There are some redeeming factors, but it's not terribly good.

James Joseph Emerald said:
The manga is better, but Berserk is a pretty awesome dark fantasy series. It's only a small part of the story. The anime is a snippet of the great story, held back by dated visuals and bad dub.

Elfen Lied.
same with Berserk, read the manga.

Watch it. Even if you don't like it, it's an important classic. Opinions are super divided on this one, so best check it out for yourself (and the End of Evangelion Movie/alternate ending, and maybe the rebuild remakes).

OT:

Black Lagoon- An Awesome action series with a surprisingly deep story and an excellent Dub

AnoHana (the longer version of the name is fucking long)- one of the best highschool stories out there. A coming of age story about friendship and acceptance of death.

Puella Magi Madoka Magica- Magical girl neon genesis evangelion only without the crappy flaws from EVA. Super highly recommended (It's only 12 eps watch it naow)

steins;gate- Time travel sci-fi with some cool characters.

Jin-roh: the wolf brigade: A dark serious political movie about a hypothetical German-occupied Japan post WWII

Kino's Journey- a travel series made up of 13 stand alone episodes about a young girl traveling from country to country.

Serial experiments lain: sci fi psychological story about the future of the internet circa 1990s. Kinda trippy, but real good

I'm not saying it's bad, but I just don't think you'll enjoy it, given then list of things you listed.
In the first episode, Lucy gets shot in the head, leading her to develop a slit personality Nyuu. Nyuu starts off with an infantile intellect and Kouta struggles to keep cloths on her.

Not to mention, it seems that the only time Lucy can fully use her vectors is when she's nude.
However, if you want a "serious" anime, I suggest Monster.

Now and Then, Here and There ( Oh Boy, nothing funny about this. In fact, you mightWILL start crying.)

Boogiepop Phantom ( Watched a few episodes, but this show was way too dreary for me.)

Eureka Seven ( One of my favorite anime. A roller coaster of emotions, as well as one of the best soundtracks in anything ever. If you really like it theres a recent sequel called Astral Ocean. Never watched it mostly because I'm stubborn in when I feel something is over, I sort of erase any sequels from my mind)

Basilisk ( Awesome action with interesting characters and violent. Oh Boy violent.)

Rainbow: Nisha Rokubou no Shichinin ( Awesome animation and dark. Also, I have a thing for intense male freindships)

If you want something grounded in reality, watch Monster. It's a good series in its own right (though it is slow paced and emotionally draining at times) and basically my de-facto "anime recommendation for people who hate anime" due to its lack of fantastical elements.

Here's a few that I think stands out from the "common anime tropes like gratuitous fan service and seemingly schizophrenic characters"

Katanagatari:A TONNE of dialogue but still a interesting, story driven anime. There are good action scenes littered here and there but they're made to be short.

Neon Genesis Evangelion: Screw Critical Miss and their constant insults! I enjoyed it despite how weird it was. It's kinda tame at the beginning but nearing the end and during the movie (End of Evangelion not the rebuild) it gets "weird".

Kokoro Connect: A group of teenagers (bear with me) are suddenly used as guinea pigs for the amusement of a strange entity known as heartseed. Basically he begins messing with their lives (changing bodies etc) and the show focuses on how they cope with the problems. There's quite a few serious issues throughout the anime.

And here's some movies
Summer Wars: An interesting movie about family and a digital world. It was interesting as well and explored the concept of how the world would be like if literally everything was connected to the internet.

Porco Rosso I could recommend the entire gallery of Studio Ghibli movies but Porco Rosso is my personal favorite. Nice art, nice story (albeit short).

Sword of the Stranger: Another interesting story, I'm really bad at descriptions. Just check out some scenes and decide for yourself. I enjoyed it.

I definitely second Steins;Gate and Puella Magi Madoka Magica.

Steins;Gate has a great story and strong characters and while it can get a little silly it's never over the top with the crazy.

Puella Magi Madoka Magica might seem terrible at first (god damn magical girls) but give it till the third episode, I guarantee you will be hooked after that.

Welcome to the NHK might be interesting. It does include some weird stuff but it's not presented as the normal state of affairs. Every single character is very clearly dysfunctional. And what follows is the most hilariously sad story I've seen in quite a while. Not quite sure what genre this would be, I don't really think it's any... Is there a dysfunctional characters incapable of coping with society genre?

For something slightly more lighthearted, but with some interesting themes nonetheless, there's Planetes a story about garbage collectors cleaning up lower Earth orbit. It's a good story although not all that fast-paced, very well written characters. I guess it's a sci-fi slice-of-life anime with some romance.

With more action is Library Wars, it's about a future Japan where, because of reasons, all media has been censored by the government with one exception, that which is contained in libraries. To protect the uncensored books the libraries have been authorized to maintain their own militia and they duke it out with government forces to protect free speech and all that, with some added political intrigue thrown in.

Also recently watched Steins;gate. Which had me worried at first since pretty much the entire cast was female with a male protagonist, but luckily it didn't turn into a harem disaster. It's an interesting story regarding time travel and has some quite good characters, might be worth checking out.

Wolf's Rain is a pretty serious anime.

Madoka Magicka is great too.

It's a deconstruction anime so it' starts out as your silly magical girl anime, and quickly devolves into something a lot darker.

Attack on Titan is pretty good too.
I know the fanbase is pretty annoying, but like Death Note, it's warranted.

Baccano is my favorite "mature" anime, but you have to make a pretty solid effort to keep up with the jumps in time. It has a really colorful ensemble cast and some of them are even sane! Attack on Titan is another good one, as is Steins Gate.

Not an anime, but katawa shoujo is a free visual novel. It is without a doubt one of the greatest works of fiction I've ever experienced.

Might be a silly question, but:
You say you've watched FullMetal Alchemist, but have you seen FullMetal Alchemist: Brotherhood?

I recommend Psycho Pass. Interesting universe setup which basically explores the notion of persecuting criminals before they actually commit a crime. Great soundtrack.

I never got or liked that either. Although that's only really in the first season of Stand Alone Complex. In season 2, the film Solid State Society and the new film Arise, she dresses more sensibly. I recommend giving them a shot.

Here are my recommendations.

Darker Than Black - The basic premise is that there are a group of people who have various abilities, but the use of these abilities requires an obeisance. They are compelled to do something in order to be able to use them again. As such they are referred to as "Contractors". Their abilities make them very useful as spies and assassins and are commonly used by various organisations and factions to meet their own ends. The story follows a character known as Hei, and his small team of operatives, as well as the police commander in charge of dealing with crimes relating to Contractors.

It's as "serious" as Death Note in that it's mostly straight faced, but has the occasional humour.

Puella Magi Madoka Magica - Other people have already mentioned it, but it bears repeating. Just make sure to watch until at least the end of episode three before writing it off. If you don't then you will walk away with the completely wrong impression of what it is like.

Ergo Proxy - It's not one I'd recommend to anybody but you said mature/serious and for the most part it fits the bill. It's set in a bleak post apocalyptic world where people live inside a domed city due to the ravaged world outside. It follows a member of the security forces (equivalent of an FBI/CIA agent) as she uncovers various truths about the world. It has some supernatural elements in the form of godlike beings known as Proxies, which are one of the keys to unravelling the mystery.

Apart from a couple of "humorous" episodes it is also fairly straight faced.

Mardock Scramble - Not a series, but a trilogy of films. Only the first two are out yet. A girl survives an attempted murder due to the timely intervention of two private investigators. Her life is saved due to her being enrolled in a life support and witness protection program that repairs her body in order to allow her to testify against her attacker. Although of course once he finds out she is still alive, things escalate quickly.

It is generally speaking a serious anime, but it does have it's quirks. Not laugh out loud or "silly" humour, but some rather strange moments. A little like something you might expect from a Tarantino film (notice I said a little). It is what my avatar is from, so you can see what the art style is like.

Attack on Titan - The first series is still running, but I think it will suit what you are looking for. One hundred years ago humanity was brought to the point of extinction by giant humanoids known as titans. In order to survive they built a giant city consisting of three walls and for a hundred years they have known peace while inside. The series begins when that peace is shattered.

Again, for the most part it is straight faced and serious, but it does have the occasional humorous sections.

I keep hearing how overrated it is, so I guess it's one of those popular shows with a really vocal in-your-face fanbase?

I like anime but I don't really "follow" it, so I have no idea what the fans are like in general.

It still can't escape that freaking shounen mold though. And it could've been so good.

OT: Check out Satoshi Kon's stuff, Perfect Blue, Tokyo Godfathers, Paprika, Paranoia Agent. It's probably the most mature anime you'll find, lacking any of the usual tropes. Also, try to find Neo Tokyo Labyrinth, Robot Carnival, and Memories. Fenomenal works.

Check out Shigofumi. It is about mail messengers from the afterlife and how the person deals with deaths of a loved one.
