I really hate these threads cause then everyone brings up NON-metal bands like Disturbed, Mastodon, Lamb of God, Trivium, etc.

Ok let me recommend you some good REAL metal:

Thrash metal: Kreator, Destruction, Megadeth, Overkill, Sepultura (before Chaos AD), Iced Earth.

Black Metal: Bathory (first 4 albums), Mayhem, Burzum, Gorgoroth, Old Man's Child(not the new album though).

Death Metal: Death, Hypocrisy (first couple albums), Cryptopsy, Autopsy.

Melodic Death Metal: Dark Tranquillity, In Flames (before 2002), At The Gates, Arch Enemy(first 3 albums), Carcass (Heartwork album only), Insomnium, Children of Bodom(first 3 only), Kalmah.

Power Metal: Helloween, Stratovarius, Firewind, Iron Mask, Magic Kingdom, Warmen.

Folk/Viking Metal: Bathory (after Blood Fire Death), Ensiferum, Manegarm, Equilibrium, Finntroll, Eluviete, Korpiklanii, Wintersun (actually a combination of this and previous two).

Misc metal: Nevermore, Opeth, Dream Theatre, Queensryche, Atheist.

If that's a list of popular heavy metal, then why are Pantera not in that list? :p

So yeah, I forgot to mention Pantera in my other post, but you should also check out Strapping Young Lad, as I dont think anyone else has mentioned them...

Got to reinforce the Maiden recommendations, that's pretty much required. Couple of others I've not seen mentioned are Skyclad and Subway To Sally (especially Das Ratsel II).
And of course, you could always pick up Brutal Legend for more ideas :)
