There is no standardized way to keep a game's save data (which really would be rather pointless). The .sav-extension is one a lot of developpers use with saved games, but the formatting of the file is different for each game.

So you'll have to look up wheter someone reverse-engineered the save data specification of the game in question (Mount and Blade in this case) and either use your favourite text editor (if the files are in plaintext) or a hex editor (if they contain binary data) to modify them. Google is your friend here.

You almost certainly won't be able to do it in Notepad, since game save files are almost always in some binary format. Try a search for "Mount and Blade character editor"--usually at least one or two people will put together programs for games that let you mess around with stats the way you're wanting to.

well if u want to mess around with your stats on mount and blade then just go to the character screen, click stats, click export. then got to my docs, mount and blade, characters and there you will find a text file with all your stats in it. just mess around with that go back into mount and blade and import it. as for a .sav editor i have never been able to find them.
