I mean, something like Zombieland would technically fit the bill, but it doesn't exactly go to great lengths to try to explain how it all works, since it's a comedy. I mean, almost all zombie movies have the heroes hole up in a mall or something, but I don't think I've seen one where the movie goes into how they'll keep getting fresh food (canned goods spoil) and water (bottled water soils eventually too, and the tap won't run forever without maintainance), or how to dispose of waste (it attracts flies, who then get on your food, and then you've got rampan dysentry (actually that's true for the zombies as well)), etc...
"Land of the Dead" is the only one I can really think of, it was the 4th movie in George Romero's "Dead" series. It's at the point where Zombies have basically taken over the entire planet, and the remnants of humanity live in a giant walled in city (sort of like "Attack on Titan", now that I think about it).
