So I'm try to get a new rig so I can get into PC gaming, I've been shopping around and I came up with a list (for around the £1k mark) that looks a bit like this:

CPU:
Intel Core i7 2600K
Operating System:
MS Windows 7 Home Premium 64-bit
Motherboard:
Asus P8Z68-V Pro
Memory:
8.0GB Corsair DDR3 1600mhz XMS3 (4x 2GB)
Hard Drive:
1TB S-ATAII 3.0Gb/s
Optical Drives:
22x DVD±RW DL S-ATA
Graphics card:
ATI Radeon HD 6970 2GB
Sound card:
Onboard 7.1 Audio
Case:
Xigmatek Asgard + Xigmatek 700W PSU
Monitor:
LG 23' E2340S-PN LED
As well as:
Razer Abyssus Gaming Mouse & Keyboard

I've got a few questions about this set up. Is it any good? Do I need all of this? Should I upgrade anything?

Remember I'm aiming for around £1000.

Everything looks good to me. I am not familiar with the Power supply you have chosen, and i usually tend to stick to Antec, OCZ, or Seasonic brands. Power supplies that come with cases tend to be only average quality, and you never want to skimp out on the power supply. I would also recommend getting 2x4gb memory sticks instead of 4x2gb. Leave some room to upgrade if you are ever so inclined. If you have te budget for it, consider placing a dedicated sound card into the machine, especially if you will be gaming. The difference will not blow you away by any means, but dedicated sound cards still produce cleaner sound then onboard sound.

Looks like a great build to me. If you have a little extra money, consider getting a 2TB hard drive. I didn't think I'd need one at first, but I'm filling it quicker than I had expected.
