Unreal Tournament, and the extremely, extremely fun but under appreciated Unreal Championship (2). It was like UT and Soul Calibre had a baby, and it was AWESOME, even if it was console only.

A lot of the greats has already been posted, but where is the love for Operation Flashpoint? man, the hours spent in multiplayer flashpoint sessions on custom maps...
We used to play this Vietnam scenario that would take four hours to complete, and if you died, that was it, and those who have played that game know how easy it was to get killed.
