If you're not about privacy (Pale Moon, Brave, Tor, Dissenter, etc) or into making a statement of some kind, political or otherwise (Ecosia, etc). Then it's mostly about a Look or fashion/design (Waterfox, etc).
Otherwise you use the currently mainstream one (Chrome or Firefox).
You can get away from Google or trackers if you want to..

I fully admit I'm paranoid, but that doesn't mean the governments of the world haven't been finding backdoors to basically everything. If a government really wants to spy on you personally, there isn't much you can do unless you are literally a security expert and have built things to be as difficult as possible to get into and even then they might find a way. Really though taking precautions such as a vpn or more secure browser or tracking blockers just makes it much harder for casual data collection, which pretty much every company tries to do.
