Team buddies for PS1 and Power Stone for Dreamcast. Oh, and Pen Pen Racing, also dreamcast.
TEAM BUDDIES! I loved that game.
Multiplayer was sick. Game was a lot better with cheats though.

Wizardry 8. Best RPG ever made.

I'm pretty sure I'm the only one who ever talks of it.
It is a horrible game.

OT: Croc:Legend of the Gobbos.
Baw. Well I guess since it's pretty much without comparison, mechanic-wise, it's a game you either love or hate.

Also, Croc is/was freaking epic, and I'd say that you miss the "lesser known" category by a mile since it's pretty much considered a PS1 legend.
But you have to think about the fact that alot of people started gaming after that time.I started gaming when i got my ps1 when i was 4.Bum there are some people that don´t really have any recollection of the ps1 era.

Hearts of Iron 2 too, a fantastic grand strategy game by a small swedish developper, they also made Victoria, which dosen't have a learning curve, but a learning cliff, still awesome once you get it ;)

Lego Island/ Lego Island 2: Brickster's Revenge (yeah, thats right, I know it). Yeah I was about 5 when the first one came out and 8 when the second, but still. It was probably the first game that got me into gaming, and I played it so much and it has many many memories. Too bad neither are that great...

Disgaea series=best SRPGs pretty much ever... and IT SHOULD BE KNOWN BY ALL, DAMMIT.

Also Earthbound and Mother 3. I mean, Smash Bros. makes more people aware of them, but not very many have actually played those two spectacular games.

I saw Sly Cooper up in this thread; those games were awesome. Those and Jak and Daxter (but I guess it's more of a well-known game series).

You have named all the things I wanted to except for one.

Arc the Lad- Twilight of the Spirits. Not quite Disgaea gameply but a better story.

I really like Freedom Fighters; the progression style, the squad combat and the story itself all were top notch. I hardly find someone that knows about it though and that makes me a little sad.
My favorite game of all time ^

Legend of the Dragoon. It was a very fun game.
That happens to be one of my favorite games of all times as well. Every RPG I've ever played after that, I've tried hit a button while attacking to do more damage (I know it doesn't do anything but it makes me feel better)

EDIT

Oh, and Tales of Symphonia is a close second.

The RPG series Grandia for Playstation and Playstation 2. A very good series but not very popular.

Project Eden. A puzzle game set in a mega city, it reminded me of Ico, make of that what you will.

American McGee's Scrapland. So very under-rated. Great setting and atmosphere with pretty different gameplay. It also has the coolest box art of all time and you can get it for cheap.

Clive Barkers Undying. It's very much like Bioshock, if you've played it you'll know what I mean. Even the Irish accent, christ.

Startopia, a space-station sim. I liked it when I was younger, I don't know how well it's stood the test of time. It does have hitchhiker's guide style encyclopedia entries.

Tombi all the way. a true classic no-one but the most depraved of people remember
I never even owned it but remember how freaking awesome it was from the short time I actually spent playing it. If only it wasn't ridiculously priced nowadays I'd definitely buy it.

Another somewhat lesser-known game that I loved when I was younger is Digimon World on the PS1, certainly on a par with the original Pokemon games, if not more enjoyable.
