Hunters can be deadstopped in mid air or you could do a dodge-bash-headshot. Chargers are probably the easiest of the zombies to make a fool out of by running and switching directions. When you zigzag they also seem to hesitate with their charges. Jockeys are probably the worst of them all, mostly because of their low cooldown, so even if you do manage to avoid a jockey's lunge, he'll end up behind your back, ready to lunge again, the fuckin' bastard. Still, you can deal with them much in the same way as a hunter. I like to think I could do most of the campaigns solo on expert (even better than with damn Artificial Idiocy). Realism expert soloing is for insane people, though.
Also, a correction. A witch will instakill a survivor on any Expert difficulty, and zombies can be killed without headshots, but it takes too much ammo to do so. Melees and Magnum/Desert Eagle are 1-hit-kills, though.
