H'okay there is one "official" Gundam universe and that's Universal Century.
U.C. Gundam is what kicked it all off and the other universes are:
After Colony (Gundam Wing)
Cosmic Era (Gundam SEED)
Anno Domini (00 Gundam)
After War (Gundam X)
Correct Centry (Turn A Gundam)


Now out of those secondary ones I'd suggest 00 Gundam, Gundam X, and Turn A (this one is batshit insane)


Anyways, the order you need to watch U.C. Gundam in is...
Mobile Suit Gundam 0079
The 08th MS Team
Mobile Suit Gundam 0080
Mobile Suit Gundam 0083

That's the order of the main show. The main complaint I hear about 0079 is that the animation is bad, but that's something you gotta suck up because Gundam isn't a show about giant robots blowing shit up. Really the show is more of a character driven drama with giant robots that blow shit up.

The Broken Blade: An interesting inversion of the mecha genre, it consists of a blend between high fantasy culture and desert punk enviroment. The mecha are called Golems, and technology is entirely based on peoples innate magical capacity to manipulate quartz crystal compounds. Series length is 6 episodes that last 45 min. each packed to the brim with what can only be described as pure art. The original manga seems to be longer and has more content in terms of events.

This is the opening.

Also, if you care for something that has virtually no "action", see Haibane renmei, a show that I just don't know how to describe at all, but it certainly doesn't fit into any of your prohibitions. It should be noted however, that almost nothing about the setting is explained by the end of the show, as if in a sort of happy version of Lovecraftian themes.

Then, try the animated version of Tales of Symphonia. Better yet, just buy Tales of Symphonia for PS2 or Gamecube and fall in love. Do NOT get Dawn of the New World for the Wii, as it is a mediocre cash-in that can never live up to the original. Fuck you Brian Beacock.

As for Tengen Toppa Gurren Lagann which has been mentioned in half of the comments, I fully endorse it on the grounds that it is a total parody of shonen action and mecha, and Kamina is the manliest thing to ever exist... of all time.

I realise it's not for everyone, but Neon Genesis Evangelion is the best thing I have ever watched. Don't be fooled by the mechas, it's more about the characters and story than the action (for me, anyway). Be warned, though, it can be a complete mindfuck and genuinely disturbing at times. If you like that, I would also recommend one of the movies, End of Evangelion (Renewal if you can, it is better quality and has a little bit more stuff), although it is much, much weirder than the series. I can't tell you about the other movies, the Rebuild of Evangelion tetralogy, though, as I haven't yet seen them. Also, I would recommend watching them in Japanese with subtitles, as the English voice-overs are horrible imo, and contain some pretty bad mistranslations in some places.

Ok, now when you say you don't like fanservice period, or that it only annoys you when it becomes too prevalent.

Either way, I highly recommend Baccano! It has little to no fanservice (unless gore counts), a great story, one of the best dubs of all time, and it's only 13 episodes (16 if you count the OVAs).

Now, you may be turned off at first by all the pink, but trust me, A lot of guys like this to. It is monumentally hilarious with lots of it's own themes and quotes. Also the art work is simply BEAUTIFUL! You just have to look at the background to see how much effort and detail went into this. Although, I recommend you watch it in Japanese with subtitles. Manly because They have the voice actor for Edward as the lead flirt.

OP: Well, you said no shonen. Awesome. I've sworn off of it a good while ago for mostly the same reason as you.
Everyone here is recommending action or drama. I'll throw in some Slice of Life. No action or drama. Just high school kids getting into wacky hijinks. You might want to space them apart though if you think cute becomes overpowering.

Azumanga Daioh: Slice of schoolgirl life. Some of the characters include a kid genius, a hyperactive girl, her straight man, an airhead, and an accidental badass who's actually shy and likes kittens.

Lucky Star: Slice of chibi-ish schoolgirl life. Anime/pop culture references abound and lampshades are hung on things that may have happened to you while going around life. Normal hair colors are non-existent.

The Melancholy of Haruhi Suzumiya: Well, I did say no drama but whatever. It's a good show and not quite as down-to-earth as initially implied. Deadpan snarker narrator gets dragged around by eccentric high school girl in search of the supernatural. Lower on the sugary cute scale than the others.

K-On!: Four high school girls form a rock band together.

Hidamari Sketch: Four art students live in an apartment right across from school. The principal has a really tall head for some reason and one of the teachers is an adult child. Uncommon hair colors on almost everyone.

Finally, Magical Girl Lyrical Nanoha. Magical Girl show with heavy influence from Super Robot shows, so instead of shooting hearts at people, we get laser beams. Just beware the transformation sequences because there are no sparkles to hide nudity. They thankfully become rarer as the series goes on. First two seasons are 12-13 episodes long so it's short and sweet, the characters are likable, and the action is fast paced and intense.

Sure, a lot of these will have already been mentioned, but I will write a list anyway. I consider the following some of the best anime ever:

Clannad - (Then watch After Story, yeah as if you weren't going to once you finished the first season!) It's pretty much just an amazing story, sure it's disguised as a kind of love/harem kinda thing, but it's an emotional roller coaster. It broke my heart in two with its sheer beauty.

FLCL - Everyone's said it, they're not wrong. Just watch it, 'kay?

Baccano! - An absolute epic. Incredible story, very funny but also very dark.

Durarara!! - The spiritual successor to Baccano!

Sayonara Zetsubou Sensei - Brilliant comedy, a little dark but very funny.

Bakemonogatari - Very funny, amazing art style, great themes, brutal.

Azumanga Daioh - Possibly the funniest anime I've seen.

Darker Than Black - Just very cool (Second season is a bit different, for some reason they decided what the anime was missing was a slightly loli girl with transformation sequences...)

Welcome to the NHK! - Fantastic! Psychological comedy, really brilliant story. Hard to explain.

ToraDora! - Yes, it's a romantic comedy. But it's the best one out there.

Tengen Toppa Gurren Lagann - Yes, it's a mecha. Yes, it's also a shounen. But oh boy, is it an incredible series. (I actually can't stand mecha by the way, TTGL is STILL one of my favourite anime of all time)

Finally: The works of Satoshi Kon - Paranoia Agent, Perfect Blue, Millennium Actress, Tokyo Godfathers and Paprika (They're the ones I've seen, but there are a few more)
Anything Satoshi Kon touched turned to gold.

P.s. Monster is a real epic, but a lot of people complain about its length. Brilliant mystery though. It could be called similar to Death Note (maybe?) except the main character isn't behind it all :p

Oh and, for manga, try:
Mirai Nikki, Medaka Box and History's Strongest Disciple Kenichi.
They could all probably fit the Shounen genre (Especially Kenichi, I imagine you might like that one the least, considering you didn't like One Piece or the other big two) but they're all very cool.



Just a quick edit: I've only recommended stuff I've finished, there are a bunch or series I'm currently watching that are really promising but I couldn't really judge them until completion. Ones that are looking to be very good so far are:
