As several people have mentioned, Cowboy Bebop. Ghost in the Shell: Stand Alone Complex has a very good story, and I thought Planetes wasn't half bad.

And I'll mention Gundam (particularly Gundam 0083), not because it is good or has any decent story, but just because I always mention it :)...
0083 has the added benefit of being both a)short and b)Not being a preachy as fuck, I'm looking at you Wing and Seed.

As for my suggestions? Well, 0083 of course, Afro Samurai, Super Dimension Fortress Macross, Kannazuki No Miko, Chrono Crusade are all good ones.

I'm aware there are lots of anime threads before (lots!), but i decided to make my own as a) i was HOPING that i might get some specific and considered suggestions instead of just peoples own personal favourites reeled off. I mean, i've seen ones where they specifiy it had to have very little/no action and plenty or romance, and people are suggesting bleach/naruto. While very good anime, it's hardly fitting what was requested.

Second was as mentioned previously, most of the threads do just consist or a large list of peoples favourite anime's, without any reasons why they are good/info about the anime, and tbh, if i wanted a list of anime, i could just google it. Granted if lots of people state an anime is good then it is a decent indication, but 50% are bleach, naruto, one piece and death note.

Perhaps it was pointless to create the thread, but i figured it couldn't hurt :p
I see why you do it, but going by your list, you seem to have similar tastes to a lot of folks here, so the same things do get recommended time and time again you see.
I'll agree that Full Metal Alchemist seems something you might enjoy, though it is rather bleak in places. Have you tried the Studio Ghibli films? You might enjoy some of those.
Everyone has such varied specifics it's hard to know what to suggest. If it's the violence that puts you off Hellsing then that might limit your choices.
I enjoyed FMA, in hindsight i really should have given a longer list of stuff I have watched, but i didn't want it to drag on too much.

As for hellsing...I just felt it didn't go anywhere, they had some wonderful characters they never really did anything with, i mean what was the point of even having the chick they turned into a vampire in the anime at all? She did nothing. Alucard himself was awesome, but i felt they could have more or less just shown him being awesome in the last episode without any backstory and it wouldn't hard really detracted from anything due to the absence of it.
