I know a lot of these pop up, I can't be bothered looking for one and I want my own, sooo...suggest some good anime, the one's I've watched are:
Wolf's Rain
Spice and Wolf
Neon Genesis Evangelion
Cowboy Bebop
Soul Eater
Kuroshitsuji
Ghost in the Shell: Stand Alone Complex
Gundam SEED
Gundam SEED Destiny
Scrapped Princess
Our Family's Fox Servant (I think that's what it was called)
Gankutsuou
Hellsing (and Ultimate)
Kenichi: History's Greatest Disciple
Death Note
Bleach
Rizelmine
Devil May Cry
Disgaea
Loveless
Code Geass
Fate/Stay Night
Gurren Lagaan
FLCL
Elfen Lied

There's more but they're the phenominally popular ones, like DBZ etc. so what more could I watch? any obscure ones?

A Hermit's Cave
Quick check...

Yep:

Ergo Proxy
Witch Hunter Robin
Darker than BLACK
Durarararararararararararararara (not that many 'ra's' but you get it)

Based on your having viewed NGE: RahXephon & Dual! Parallel Trouble (former's quite serious while the latter's more comedic, but both the same general approach, though RahXephon name drops like hell and needs a lot of patience and at least two run throughs to fully get it)

Eh, ones I could suggest are: Higurashi no Naku Koro ni, Higurashi no Naku Koro ni Kai, Code Geass R2 (I saw the first one on your list, not sure if you saw the second), Claymore, and The Girl Who Leapt Through Time. The last one is a film rather than a series, though.
Oh, and if you enjoyed NGE, I'd suggest the rebuild films. I've watched Evangelion 1:11 You Are (Not) Alone, and it was rather good. Just waiting for the English release of the second.

Fairly broad appeal:
Baccano! [http://www.escapistmagazine.com/articles/view/editorials/reviews/anime/6404-Anime-Review-Baccano]
Monster [http://www.themanime.org/viewreview.php?id=969]
Berserk [http://www.themanime.org/viewreview.php?id=57]
Black [http://www.themanime.org/viewreview.php?id=1147] Lagoon [http://www.themanime.org/viewreview.php?id=1148]

More dependant on personal taste:
Higurashi no Naku Koro ni [http://www.escapistmagazine.com/articles/view/editorials/reviews/anime/6503-Anime-Review-Higurashi-When-They-Cry]
Excel Saga [http://www.themanime.org/viewreview.php?id=270]
Grave of the Fireflies [http://www.themanime.org/viewreview.php?id=110]
Kara no Kyoukai - The Garden of Sinners [http://www.animenewsnetwork.com/review/kara-no-kyoukai-the-garden-of-sinners]
Puella Magi Madoka Magica [http://www.escapistmagazine.com/forums/read/326.275533-Puella-Magi-Madoka-Magica-Review]

I, the internet stranger with entirely unknown taste and standards for quality, will vouch for those.

Right, some good suggestions which I may have to research, also, new thing to the topic (I'll have to alter the thread a little) opinions on what I have watched? Also I've seen Code Geass R2, Darker than BLACK, and Kara no Kyokai

I read that line while listening to this [http://www.youtube.com/watch?v=ZCk4RiKH9H0]

Strangely epic...

OT: Umineko No Naku Kuro Ni (Higurashi's spiritual sequel)

Deadman Wonderland (just started)

The World God Only Knows, the manga is far superior though, i mean Keima lost his God Points... Not cool

-Can't see One Piece there (unless you count in under the other section). My personal favourite anime/ manga series at the moment but it is quite long.
-GaoGaiGar is good if you like mechs but the episodes are a bit repetitive.

Nana, Maison Ikkoku, Kimagure Orange Road, K-On!, His and Her Circumstances

Black Lagoon, Berserk, Claymore, Guin Saga, Gunsmith Cats, Read or Die

Serial Experiments Lain, Key the Metal Idol, Kino's Journey, Yokohama Kaidashi Kikou

That ought to get you rolling along.

That music could make most things epic, including my pretentious disclaimers.

At least it sure is the outcome a lot...

OT:

If you had no trouble with watching Elfen Lied, then perhaps I'd also recommend a look at Kite [http://www.animenewsnetwork.com/review/kite][footnote]Several versions exist; I'd go with the most censored one reviewed here, as all that's missing is the unpleasant hentai material.[/footnote]. Very divisive that one though, it's sort of like a Tarantino movie only with the absurd action and depravity ramped up to 11. Think Leon: The Professional, Kill Bill, and Irreversible all blended smoothly together.
