It's not anime itself, so much as specific anime. I like many series, my favorites being Azumanga Daioh, Gintama, and .hack//. I'd like them even if they weren't considered anime (or manga), because they are very interesting in how they play out the story and events (maybe not so much Azumanga Daioh). I really think that there is too broad a range of subject matter to confine anime as one thing.

It just depends on what you are looking for, I guess. I really like surrealist stuff, which anime provides for in spades.

Depending on what you liked about DBZ, you might enjoy Berserk or Hajame no Ippo.

If you liked DBZ for the humor and fights, then sir, don't look any further, One Piece is the one you need for crazy long fights that remains entertaining to watch and over-the-top humor. Not to mention, the vast array of characters that are all unique and add to the layer of awesomeness that one piece is.

I only seem to enjoy more... Western anime. Things where the characters have English names, and its set somewhere that isnt Japan and such... Dunno why.

I watch anime, but I am extremely picky about what makes a good anime. I get bored pretty easily, and even xxxHolic (an extremely strange/interesting show about the supernatural) sometimes bores me half to tears. More on topic, I like anime that brings new things to the genre it's in. Creative magic is cool, putting something other than a miniskirt on your female characters is good, and putting a new take on things from legend is certainly very interesting, though you may have to brace yourself for some strange results. (Rain sprite = crazy goth girl?)

Whatever, just wash your hands.
I have a love hate relationship with anime, I love the creativity but I hate the sheer insanity. By insanity I mean animes annoying habit of latching onto a completely stupid idea or abstract concept and having it be the most important thing in the universe, an example is I just finished watching the series gurren lagan and
*minor spoilers I guess*
its big thing was spirals, spiral life vs anti spiral (about half way tho they started mentioning this and it makes as much sense just saying it here as it did in the series) I enjoyed the series overall but having all the chars in something reguard something totaly stupid like that in totaly serious terms gets old really fast.

Anime isn't good. Some anime is good. Most is rubbish, just like any other medium.

The thing I noticed, particularly with kids these days (I define 'kids' as anyone significantly younger than my 28 years on this planet), is the popularity of anime vs. THE ALTERNATIVE.

Entertainment for the Boys 6-16 demographic is atrocious, these days. The standards and practices of American television making have strangled out what kids that age want to see -- conflict, violence, competing ideologies, good vs. evil. Instead, they're plunked down in front of rubbish that focuses on wacky humor to the exclusion of all else.

In comes Japanese produced shows, where S&P has a whole different manual, and it's like a gift from God to these kids. Here's what they want to see, and it's presented with all the standard conceits of Japanese media. So they start looking for these conceits because they know THAT'S where the good entertainment is.

This is why anime is popular, and why American productions are doing everything in their power to load up on the bells and whistles that naturally dangle off of Japanese media -- that's where the kids eyes are glued. Where they can get what they want.

I am not an anime lover; I know too many people who snatch up anything anime related with starry eyes, then show it to me and spend the whole god damn time explaining away the crappy pacing and ludicrous caricatures of humanity with oblique theories that they read from an industry publication. I have seen anime that I liked, but they are far and away the exception rather than the rule.

Do not mistake a cultural phenomenon for anything other than it is: the natural reaction of a market straining against limitations placed upon it by a body ignorant of the market's natural flow.

I like some animes, specifically animes which explore a deeper philisophical trail of thought. The nice thing about anime is that, unlike Western cartoons, anime is something that is actually used to tell serious stories. Neon Genesis Evangelion, Fullmetal Alchemist, Ghost in the Shell, Akira, these are all serious thoughtful stories, with insight into the human condition, and a number of other things. That said, some animes, you couldn't pay me enough to watch, DBZ is case in point.

I like any anime that has characters I like, a story that's at least interesting, and artwork/animation that doesn't make me cringe. Then I check to make sure the original manga (if there is one) isn't better. Usually it is, so my list of anime watched is comparatively low.

The ones that make the cut:
Slayers. Really funny, great protagonists, coherent and interesting magic system and setting. The light novels are great, too.
Steel Angel Kurumi. The characters are hit-or-miss (as are the outfits), but the story more than makes up for it, especially with it's tactic of there being antagonists who aren't actually villains. The manga adaptation...kinda sucks.
Cowboy Bebop. Does this need explanation?
Yu Yu Hakusho. The only anime I've seen based on a manga that I'd say is better than the original.
Haruhi Suzumiya. Since I'm very hype aversion-resistant, I watched it even though it's popular. It's a brilliantly deep story with interesting characters. I'm looking for the original novels, as well.

I'm looking into some other things, as well. Gurren Lagann held my interest to about a third of the way in. I'm not sure I want to keep watching, though. It'll probably still be enjoyable, but... EDIT: *MASSIVE SPOILER ALERT*

it'll take me a while to get over Kamina dying.

Yup, anime is too broad to throw under one big blanket. Also, you mentioned Gintama in the first response: you get massive amounts of win cake. Azumanga is supposed to be a comedy mostly, isn't it?

Whoa, lotsa harem anime there. Not that there's anything wrong with that :D
And stick MASSIVE SPOILER ALERT on that tag, it's a biggie. I only know about it because some jerk runs around screaming about how that event sucked all the time in my dorm.

I don't have a preference, though I usually stay clear from space-related and mecha animes, or animes that require a guide to enjoy.

I like animes that are not dime a dozen premises; like magic girls with the power to cause nosebleeds. I try to avoid animes that use gratuitous amounts of boobage since they usually offer no plot.

For me, I like animes like FLCL, Cromartie High School, and Cowboy Bebop (one of the good space animes) since they actually have a ending and a 'jump right in' plot. I tried to get into Mahoromatic and Full Metal Panic, but in the case of the former, they got uninteresting.

Azuma Daioh is okay. It's cute and down to earth, but the humor isn't my kind.

But...none of those are harem anime.

Done. I must admit, screaming about it seems tacky. I just silently weep...

I think the thing that intrigues me the most is that its different. Each anime has its own little quirks and intricacies that if you apply them to that anime they work but if you apply them to life or any other, it makes no sense or makes them laughable. So if you view them on a case by case, they're a little more bearable.

Ones I've seen and enjoyed. Ghost in the Shell (both movies and both series), Gurren Lagan, Full Metal Panic (forced myself to watch the Fumoffu episodes), and Black Lagoon. Currently am watching through Bleach, but good god does that thing just drag on and on and on.
