Full metal Alchemist Brotherhood

Elfen Lied
New dominon tank police
Angelic layer
Needless
guyver (I've apparently seen the remake of the original series)

Am currently watching:

Lucky star (I'm gonna finish it, even if it kills me)
Hitman Reborn (seems to be going places, bit slow tho)
Hellsing OVA (apperantaly the old one was crap so I've been told to stay away)

Well since I couldn't begin to list all the anime I have seen I will recommend my absolute fave (and I am surprised I didn't see this popping up more).

High School of the Dead

Great characters. Great use of zombies. George Romero type zombies. Why are you still reading this GO WATCH NOW!!!! (unless of course you are yeller)

my favourites cowboy bebop,desert punk, TRIGUN!!!,death note,bleach,ghost in the shell,the boondocks and id recommend them all

I'm going to try and just do more than give you my favorites, as I like things like Ouran High School Host Club (a biting satire of Shoujo and reverse Harem) and extremely niche stuff like Wolf's Rain and Revolutionary Girl: Utena. (EXTREMELY niche and artistic)

One I can recommend is Fullmetal Alchemist. (NOT BROTHERHOOD! NOT if you haven't seen the original because YOU WILL BE CONFUSED. Just Fullmetal Alchemist classic.)
I would also recommend Cowboy Bebop and Outlaw Star. They're a lot of fun.
If you're going to watch any Gundam series, I would recommend Gundam: Wing, as it doesn't have any alternate continuities like the UC story lines, so its less confusing, and it doesn't suck like Mobile Fighter, Seed, and SD Gundam.
If you're OK with lots of gore, go with Baccano! or Berserk (all though the latter's ending is a terrible screeching cliff-hangery halt, its still a damn good story)
Death Note is pretty cool too, but I see that you like Shonen tournament faire, so I would absolutely recommend a classic, Yu Yu Hakusho.

I've been watching Highschool of the Dead and Full Metal Alchemist Brotherhood, but my most favorite was Elfen Lied. I loved that anime, even though I wanted to kill myself over the ending.

R.O.D. - Read Or Die (Pretty surreal, though the idea that England has a load of secret agents all trained to collect rare books is freaking sweet. That and the characters are really well rounded)

Tegen Toppa Gurren Laagan (Always over the top but that is what makes it such a good anime)

Higurashi No Naku Koro Ni (Loved the first series and I've heard Kai and Rei are good as well)

Elfen Lied (Don't see how people can bash this, it's really really good. Yeah, the characters aren't the greatest, but their depth and development is really well done)

Highschool Of The Dead (Blood 'n' boobs. What more do you want?)

Neon Genesis Evangelion (Try this one AFTER getting into anime, it's a bit tough and sometimes confusing. Also, don't watch the new films unless you've either finished the series or haven't started at all; they're significantly different)

Lucky Star (Simply an anime for anime fans. A fair few of the jokes washed over me, and the first episode felt like it went on forever just with the eating scene ¬¬)

Azumanga Daioh (A pretty funny slice-of-life anime, though it may not seem all that funny to some)

What great characters? The only likable character is that teacher who commands the sexbus. Other than that, they're all cliches and hollow as hell.

I still read the manga though. Probably because I hope to see someone die soon.
Well sure most of the great characters didn't last long. My fave was the 2 girls who were holding hands. Sure they only had a minute or 2 of actual screen time but they made a huge impact on me.

anime is a lot more popular than people give it credit for.

The first anime I ever watched was probably Ronin Warriors followed by Sailor Moon. The anime that holds a special place in my heart has to be DBZ due to its awesome action sequences and my introduction into overall anime. Before then, I didn't even know that there was a totally separate type of cartoon style. I thought Ronin Warriors was just another cartoon like Scooby Doo.

Haven't really read the posts before this but I imagine my suggestions will have probably already been mentioned, nonetheless my favourite anime are:

Clannad + After Story - Lovely story, really emotional
FullMetal Alchemist - loved the first one, not seen Brotherhood but as it follows the manga (Which I have completed and loved) more closely I imagine it's pretty good too!
Cowboy Bebop - Just awesome
Samurai Champloo - So cool :p
FLCL - Only fault? Too short!
Toradora! - I don't know if you're into romances or whatever, but this is brilliant and very funny
Azumanga Daioh - Hilarious.
Baccano! - Really cool story, fantastic action, very funny
Durarara!! - Baccano's sequel in spirit
Welcome to the N.H.K. - Psychological drama comedy...?
Paranoia Agent - Brilliant psychological mystery... thing
One Piece - You like Naruto and Bleach? One Piece is the third (and best) in that spiritual trio :p
Hanamaru Kindergarten - I just found it really funny...

I realise that not many of these really take into account what you've said you like, but I just listed ones I loved and can remember!

Haven't watched the anime, and I don't plan on doing so either, but it boggles my mind that 2 minutes of two girls holding hands, could be enough to warrant you to add that it has great characters?
They weren't just holding hands. That is just how I remember them (since I am just lousy with names). And I would only put 1 into the "great" category. And I say it because she broke the typical cliche I was expecting. She acted like a human. That is why I liked it so much. The characters were more human than cliched IMO.

I don't think we need 1000 hours with a character to fully develop them. Sometimes less is more.

When I think of it, I haven't seen new anime in months.

Well, what I suggest is Elfen Lied. Yes, it's 18+ for its frequent nudity and violence, but it has amazingly good character developement and a unique plot.

My favorite animes are Gurren Lagann, Toaru Majutsu No Index, Toaru Kagaku no Railgun, Lucky Star and Elfen Lied. I would also recommend Higurashi When They Cry, Wolfs Rain, Outlaw Star, Xam'd, and Cowboy Bebop. There are others that I just can't think of right now.

Don't watch much anime, but still some.

One Piece: Action, amusing characters, story is good.

Tengen Toppa Gurren Lagann: Best way I can think of to describe it is "BBWWWOOAAMM SMASH HOLYCRAPTHATSAHUGEMECH!"

Also, anything Studio Ghibli makes.
