i also apologise for being a ridiculous noobface
but my question is this...

those occassional statistics in the top right corner
what do they actually do?

for instance, there's one about getting 100 critical hits
theres one about killing enemies with a one-handed weapon
etc.
but for the ones that aren't achievements or trophies... what actually happens when you fulfil the criteria?
because i have done a few
and nothing seems to have changed

You sometimes get perks for them, and you get experience for them. That's what I have found anyway.

They're basically in-game "achievements".

You get small experience point boosts when you fulfill them. They're very similar to the challenges found in Borderlands.

They're challenges, have just started myself so haven't completed any of them, but I'm guessing you get som EXP for them.

Pretty much what everyone else has said, the perks I have found that you get are:
Bug Stomper - Extra Damage against mutated insects
Animal something or other - Extra damage again animals
Lord Death - Extra damage against all enemies.

As everyone above has said, they're in-game challenges. If you open your PIP-Boy and go to the third section (where you can view your map and quests) go to the 'Misc' tab. You can then press 'Y' (for 360 version) to toggle between Notes and Challenges.
