Mushi-shi. Clean, beautiful animation, stunning visuals, and excellent storytelling make this anime my pick.

I've only watched a few anime series in their entirety, but I think Hellsing is the best of them. The scales are slightly tipped in its favor, for me, because it's so exceedingly dark and strange. I really have to give an honorable mention to both Cowboy Bebop and Neon Genesis Evangelion. All of these series blew me away, and I love re-watching them.

About 0.1 episodes

My favourite would have to be Welcome to the NHK
2nd Elfen Lied
3rd Cowboy Bebop
4th Azumanga Daioh
5th Zero No Tsukaima

Have still been meaning to watch Higurashi, Monster and Fist of the North Star

Higurashi When They Cry
D: Noooo! I have been pre-empted! D:
And I was planning on using that as my next avatar... or one of my next ones...
*Kinda shakes fist at nicholaxxx, but cannot truly be angry at someone who likes Higurashi and has a Rena-chan avatar*

I'd probably hug you, if I didn't really like physical contact.

OP: If ye cannot guess from my post so far, I love Higurashi (Specifically I preferred Higurashi no Naku Koro ni Kai).
In my OPINION it is a great anime, best I have ever watched. I cannot say best ever.
I hate to raise one thing above all others.

Code Geass. I hate to say this, but I pretty much just won.
Pfftt... Bwaahahahaha!

No.

Geass was okay, but the first season was very hit and miss in execution, and the second was, frankly, a trainwreck of abysmal pacing and hastily abandoned and redone plots.

So, y'know, if sub-Gundam mecha action is all it takes to make you think you won, I'd hate to see the mess after you saw something like Macross Frontier.

Tengen Toppa Gurren Lagann :p

Its got everything you could ask for from a anime <3
This. I also like Death Note and FLCL quite a bit, but Tengen Toppa Gurren Lagann is just.. so awesome that it's beyond comprehension.

Pokemon. It's extremely popular, possibly the most recognizable anime, it has been popular in movies, TV shows, and video games, and inspired several other famous anime (Yugioh, Digimon).

GITS:SAC would have to be my #1.

But ones that stand right next to GITS:SAC on the podium are..
Samurai Champloo
Ergo Proxy
Cowboy Bebop
Last Exile
Samurai 7

Casual Shinji

Should've gone before we left.

If you're talking about Japanese animation in general then I'd have to say, Spirited Away.

Though, if you mean clear cut Anime, I'd say, Akira, Neon Genesis Evangelion and Memories.
