Every cover done acoustically by Aaron Lewis, lead singer of Staind. He can take any hard rock song and make it sound acoustically amazing. He pulls this off especially effectively with Staind's own songs, but as I'm not sure if they would technically be covers then, I'll just provide examples of more "legit" covers he's done.

There's many more where those came from. Sorry I couldn't get better quality videos; it's just what came up in a Youtube search. I have much better quality mp3s of them, though.

Metallica's cover of 'Whiskey in the jar'
Yes :D

Also, A Perfect Circle's cover of Imagine. It's mind-blowingly awesome. And on Triple J's Like a Verson, Regina Spektor did an amazing cover of Radiohead's No Surprises. Worth checking out.

I actually prefer Metallica's cover of 'Turn the Page' to Whiskey.
Other then that, Zakk Wylde did a cover of 'Suicide Note: pt1' by Pantera for a MetalHammer cd that was insanely touching and well put together.

I think this is the best cover of a pop-song I've ever heard:
but I don't know the all around best one...
[sub]But this is the most creative one I've heard in a while :)[/sub]

Can't believe no one has mention Painkiller by Death, that cover is unreal!

Other good ones are:
Fucking Hostile - Machine Head
Cemetery Gates - Evile
Holy Diver - Killswitch Engage
War Pigs - Faith No More
Maniac - Firewind
Breaking The Law - Firewind
