I like the village from Resident Evil 4. It really set the tone for the rest of the game.
Yes, this was great... never forget that first sense of utter panic at being completely surrounded.

Bioshock's opening 20 mins is a great work of art too.

Ocarina of Time, because you really felt like you were one of the Kokiri in a real forest, and forgot that you were actually a hero. It was a really well done opening level, and it made the world seem all the more impressive when you first got out of the tunnel to Hyrule Field.

I'll throw in another vote for Bioshock--the first few minutes are among the very best in the game. You don't really know what to expect and crawling out of the burning wreckage, swimming onto the shore, and then fighting off wtf crazy ass people in the first few minutes was a rare, genuinely scary bit of a game that had me jumping a bit.

first level of force unleashed was epic, just pwning wookies and blowing shit up... too bad the game went downhill from there.

And if anyone played Prey, I really enjoyed the beginning (well actually the whole thing, but yeah...). It basically goes from chilling out in a bar, bored out of your mind, listening to music on the jukebox, etc. and then in the same amount of time that you spent in the bar, you've been abducted by aliens, freed from your confinement by a mysterious stranger, witnessed many other humans, including your dear grandfather, impaled by 1-foot-diameter needles, and encountered several freaky-as-hell aliens.

imo, Prey is the most underrated game evar.

Medal of Honor: Frontline

it's the best first level of a game, simply because the rest of the game was crap. relative to the rest of the game, the first level is the best first level in gaming history

It's the music that does it.
So true. I think that could be the thing that got me into gaming in the first place, watching my dad shoot all kinds of monsters to the most awesome MIDI ever.

Duke Nukem 3D's first level.
Just... because, i dunno.
Come on, I'm sure you can think of SOMETHING! There's 867-5309 on the wall next to the urinal. You shoot a rocket at the crotch of the woman on the movie screen, it explodes, and you get to go into a secret area (Innuendo, anyone?). You get to fly above the streets (or at least a section of a blocked-off street) of LA in a jetpack. You interrupt an enemy on the toilet! Duke doesn't have time to play with himself! Pig cops! AHH! There's just...SO MUCH THERE!

megaman x, music was amazing
This was what I was originally coming into the thread to post. Nothing sets the tone better than shooting robots with your own robotic arm-cannon to the sound of another really awesome MIDI. Also, Zero saving you at the end was so well-done. I still get a charge whenever I hear the song that plays when he runs in.

Oh my gawd. I can't tell you how many times I died playing this my first time through. Of course, I can do it in Pro without breaking a sweat now, but then...ugh. Great opening, especially if you watch the villagers on your binoculars. They look perfectly normal, but...

first level of Ninja Gaiden for xbox due to the fact that it actually tells you how hard the rest of the game is

I enjoyed the fisrt level and only the first level of Legendary. The game starts off with this hyper quick realistic mob scene trying to out run Fire then holy f*ck a Gryphon! then a bunch of gryphons then it starts to suck...the axe was the best weapon in an fps, sad kinda

Mass Effect, like many people have already said, it didn't feel like a tutorial, it just put you straight into the game, and the action started right away.

Deus Ex, in the first level you fight terrorist on the statue of liberty. You tell me that's not awesome.
