Eh... Sure, why not. Lets try and do this without flames.
PS1 - One of the Spyro games. Those were wonderful gems.
PS2 - Shadow of the Colossus. Truly wonderful game.
PS3 - Not played yet so I can't really say.
PSP - Disgaea Dark Hero Days. Just wonderful. I've spent over 225 hours on it so far and Ill continue to raise it much higher.
Xbox - Not played.
360 - Bioshock, because I got just about everything I wanted out of it; wonderful gameplay and a terrific story.
Gameboy - Pokemon, cause why not?
N64 - Mario Kart, cause that's all I played on it...
Wii - Haven't played yet...
PC - Lets just go with The Orange Box as I quite like all the games in it.

PS1: Metal Gear Solid. Not a fan, but I know great games when I play them.
PS2: Shadow of the Colossus. Still, in my opinion, the best console game of all time.
PS3: Uncharted 2... or Heavy Rain. Heavy Rain would've won if not for the plot holes. After seeing a few previews for LBP2, that game might claim this spot in the near future.
PSP: Disgaea. I didn't like the game, but I recognize its awesomeness and greatness.
MS: (dominated by Bioware goodness)
Xbox: Beyond Good and Evil.
X360: Mass Effect 2.
Nintendo: (didn't play the original NES and the DS)
SNES: Romance of the Three Kingdoms 3 or 5.
N64: Ogre Battle 64. Still my favourite game to appear on a Nintendo console.

GameCube: Star Wars Rogue Leader. Might have gotten the name wrong.
Wii: Um... Okami? But I liked the PS2 version of Okami a lot more... I got nothing.
