Truth is, I actually <url=http://www.gamefaqs.com/boards/genmessage.php?board=950973&topic=47437203>already argued in a discussion about such a crossover. And now I'm kicking myself for forgetting Dante vs. Kiritsugu (Quicksilver and guns versus Innate Time Control and guns).

For Fate/Stay Night...not a whole lot. I haven't read enough of the manga to judge, but I wouldn't think so. It's actually one of the strong points in the anime, I felt, that it also got the characters and their motivations down pretty well...though since it doesn't show Shirou's thought processes (and shows very little from the UBW and HF routes), I've noticed a lot of people with the tragically mistaken notion that Shirou is an unrepentant chauvanist. Powerwise, there's not much difference, especially since they deliberately added in an arc where Caster, Kuzuki, and Assassin get a chance to shine (though, since they didn't animate Heaven's Feel, one could argue that Rider is underpowered).
For Tsukihime...
yes, absolutely. The manga is more accurate to the visual novel, though we actually get to see some characters fight more (Akiha in particular gets to show just how much of a badass she can be, easily matching her Melty Blood incarnation). Ciel might even be stronger in the manga, since we actually see her use magic instead of just a knife, Black Keys, and the Seventh Holy Scripture. Everyone else is pretty much unchanged, power-wise and personality-wise.
The anime...well, you ever hear the meme "There is no Tsukihime anime?" There's a reason for it. Shiki is much blander, Arcueid is stupider and weaker, Ciel is undiminished (but slightly changed) powerwise and gets no backstory, Akiha is weaker but otherwise acts normally, and the maids...get their out-of-character moments, but act more or less the same (but again with no backstory). Roa is about the same as his manga version (i.e. a combination of the VN's Roa and <color=white>SHIKI), and Nero is made of 100% pure, finely-crafted disappointment. Arihiko is unchanged, and Satsuki is unchanged from her manga version (but very,
very much changed from the VN, of course...which is arguably a good thing).
It still manages to stand on its own merits, but it's quite different from the work it was supposedly adapting. I'm actually planning a review on the anime and manga adaptations of both works.
...I say "both" games, as if there wasn't <url=http://img198.imageshack.us/img198/7813/ryougiwallpaper.jpg>someone in <url=http://en.wikipedia.org/wiki/Kara_no_Ky%C5%8Dkai>another Type-Moon work worthy of being a secret character.
