chocobo breeding

I just recently dusted off my copy of ff7 and got to disc 2 and need to start breeding chocobos if I want to do some of the sweet ass side quests. Heres the problem i have no idea how to breed chocobos, Choco Bill didn't give me any advice at all and I'm prettty much guessing. So far all my chocobos have been piss poor.
