Anything by Kubrick, Coppola or Kurosawa.

(That would be 2001: A Space Odyssey, Apocalypse Now, Seven Samurai, Dr. Strangelove, The Godfather, Yojimbo, Sanjuro, The Shining, Full Metal Jacket, Rashomon... yeah)

You want classic? Try Duck Soup and A Night at the Opera. It'll show you that Hollywood hasn't always had to rely on ultra-violence and sex to get people to go to the movies.

Shawn of the Dead and Hot Fuzz are both by the same two guys, and two of the best British comedies you will ever see (thus, two of the best comedies you will ever see, because America completely fails at that genre right now).
You've obviously not seen The Hangover (which OP, you need to watch if you haven't already). :(

OT: Iron Giant
Empire of the Sun
The Kid (Charlie Chaplin)
The Departed
Gangs of New York (ok, basically any Martin Scorsese film)
Slumdog Millionaire
Mr Deeds (old one, not the Adam Sandler one)
Rosemary's Baby

Ok, that's all I got for ya...

I think the best thing is concentrate on the good directors first then expand out. I'm a major film buff btw and like all kinds of films, be they old, new or foreign.

Some of my favorite directors:

Stanley Kramer
Stanley Kubrick: "Dr. Strangelove" in on Hulu.
John Frankenheimer: "The Train" is on Hulu.
Alfred Hitchcock: A few films of his are on Hulu.
Billy Wilder
Ernst Lubitsch
Wes Anderson
Paul Thomas Anderson
Robert Altman
John Ford
Kurosawa
Roger Corman if your into B movies.
Orson Wells. Watch "Touch of Evil"
Martin Scorsesse
Coppola
Fellini
Tarantino
Charlie Chaplin
Vittorio De Sica. "The Bicycle Thief", great movie.
Bob Fosse: "Cabaret", "All that Jazz" and "Lenny"
Coen Brothers
Roman Polanski
Frank Capra
George Cukor
Howard Hawks
Elia Kazan: watch "A Face in the Crowd" relevant to todays pop stars.
John Huston
Preston Sturges
George Stevens
Sidney Lumet: watch "Network" predicts the future of TV, which is now.
Samuel Fuller: I almost forgot him. Watch "Steel Helmet" if you can find it.

That should get you started. I mixed in a few newer directors but when I think classic films,
it's the silent films to the 60's.

They Live is a great sci-fi "B" movie starring Roddy Piper. In my opinion it's still the best movie a wrestler has ever been in and was actually #1 the week it was released (Suck on that Dwayne "Don't call me The Rock" Johnson).

groundhog day; bill murray at his finest. airplane 1 and 2 are also fantastic, or if you want something other than comedy (idk, some people might be into that kinda thing) shawshank redemption and american beauty are two of my favourite films. It's pretty vague use of the term "classic" though

Just start at the top and work your way down. I know its a bit impersonal as a recommendation, but I don't think that there is a single film on that list that I have seen and wouldn't recommend.

Although, can I ask people, why is the Godfather considered by most people to be the greatest film of all time?
I thought it was very good, but there are lots of movies which I found more enjoyable. I just don't quite get why the Godfather is considered "the best" rather than a lot of the other films on that list.
