Working a full time job can suck sometimes. But at least I get all the cool games I can hope for.
I guess I technically collect "Magic: The Gathering" cards to play once a week in the local Type 1 tournament.
I don't really actively collect things, but I do have quite the variety of semi-uless bullshit filling my room and house.

Meat which is too complicated for me to bother cooking it. I lack space in my freezer now.
And whatever goes in the fridge seems go gather fungus before i manage to throw it out/eat it.
(ok sometimes i eat it anyways, i'm disgusting like that)
And as any gamer i "collect" games, in the sense of buying them, playing them and then moving on to the next game.
Cd's and dvd's, while not for the sake of collecting them, but for watching/listening to them.

I collect Metal CD's, mostly from Nuclear Blast Europes "clients".
Also, I collect the tops of coca cola glass-bottles, I think I've got about 2-300 now.
They have funny, random "jokes" in them, like: "Fork in eye", "Call support" and "Oh no, not you again?"

Action figures mostly, gundams and transformers and a few randoms that were cool. I'm broke at the moment so new stuff is few and far between, but I will post pics as soon as I figure out how to go about doing that on here. If anyone would be so kind as to share that information. I feel like a noob for asking but some things need to be seen.
Music (I compulsively buy new music, I'm exhibiting amazing levels of restraint if I only end up with one new album per week), video games, and... pens. I have a whole bin full of them, and I used to play with my pen collection like other children played with their action figure collection (not that I didn't have any action figures), assigning them roles in an epic saga which mainly involved battling the other pens.
I still collect interesting pens these days.
