It's been mentioned a couple of times already but I'll mention Arcanum one more time. If you take the Persuasion skill, then you have access to an awesome quest to get the master training. The final encounter of the game is also one of the most fantastic conversations I've ever seen in a game.
Also, what RPGs are there where the gameplay is the focus? Some of my favourite RPGs have pretty shitty gameplay but the fantastic story, setting and dialog make up for it.

RPGs are very much about the GAMEPLAY. Story is fine and all, but you may as well watch a movie or read a book (or talk to a live person) if you're ready to play conversational simulators.
