I need your help Escapists. I have a 5lb. pot roast and I don't have any recipes for it. Give me yours. Hurry! Time is of the essence.

1)Find a rub for it (internet) and apply, for rubs I prefer a cajun or something with spice
2)Best option would be to stick in slow cooker for several hours, if not then oven or barbacue will work (again internet for time and heat).

Cook it until it'll pull apart easily.

Shred it up, obviously.

Roll it up into some corn tortillas.

Freeze them so they'll hold their shape.

Fry in a few tablespoons of oil.

Congratulations!

You have now made taquitos [http://en.wikipedia.org/wiki/Taquito], best served with guacamole.

Pot Roasts are intended to be slow cooked, in a pot, with either a liquid or covered with a lid so that it steams. They are usually tougher so slow cooking is off absolute importance in order to ensure it isn't dry and like leather.


Other than that, your imagination is your limit. Put a rub on it, throw some herbs and garlic in there, chuck some fruit in it, do a nut crust, heck I don't know go crazy!
