The band Cake's album called B-sides and Rarities has several covers. All of which are very well done. Cake has a ridiculously skillful knack for covers. My favorites are "I Will Survive", "Strangers in the Night", and "Sad Songs and Waltzes".

Google Aaron Lewis, the lead singer of Staind. He does acoustic covers of Staind songs and other bands such as Alice in Chains, Guns n' Roses, and Tool, and absolutely knocks them out of the park. Unfortunately I can't find YouTube videos that do it justice, mostly crappy videos of live performances.

But for a good cover I CAN find a video for, how about this one?

Certainly one of the more interesting Metallica covers out there...Van Canto, doing "Master of Puppets" a cappella (except for the drums).

I think Metallica's original is pretty great too, but hey, it happens.
Truth be told, I like Metallica's songs. I just don't like it when THEY sing them. I like most the covers of their songs I've heard.

Also, En Vie by Apocalyptica, not quite sure it counts as a cover as I understand its the french version of a german song or something, but still, much, much better imo.
