I didn't notice battlefield becoming "more and more infantry." In fact, very few Battlefield 3 servers run infantry only, even fewer than there were in the days of BF2.
Even if a lot of servers did run infantry only, the fact that the option exists doesn't detract from the vehicle servers.
If you don't like infantry combat, feel free to simply not play in those servers.

Only the close quarters DLC was close quarters. Battlefield is still well known for its gigantic maps. There's nothing close quarters about Siege of Shanghai or Paracel Storm, the two maps that were extensively showcased from their upcoming release.

In addition, what is "twitch-gameplay" supposed to be? Are you referring to the fact that you have to react quickly?
That was always the case. Battlefield is a first person shooter series. Good reflexes are key to any shooter game.
I don't see how battlefield became any more "twitch-gameplay," not that it's clear what that phrase is even supposed to mean.

Also, battlefield is as team oriented as ever. You still need someone from every class to function effectively as a team. You still have squads and squad spawning. You still have spotting. What changed, exactly?
