It really isn't. The Heinz (any other brand is blasphemy) website says that ketchup doesn't have to be refrigerated and won't spoil because of how acidic it is. Oddly enough this is a repeat thread. The other thread came to the conclusions that ketchup need not be refrigerated and the suggestion is there to make it seem less processed. Also mayo doesn't have to be refrigerated. Personally, I refrigerate both.
