I'm currently going through the Metroid Prime Trilogy on Hypermode getting 100% in each game. Because I've completed the games a few times already and knew the story, I wasn't going to read all the computer monitors and backstory stuff. About 25% of the way through Prime 1 I read a monitor that told me about the experiments the Space Pirates had been doing and the disastrous consequences they've had. Though I knew the basics of what was going on, I still then found myself reading all the data entries from then on. Sure, I'd read them all before but I couldn't remember what they all said and it was interesting to find out more about what had been going on. I knew the Space Pirates where experimenting with Phazon and what they wanted to achieve but it was still fun finding out all the little details of what had been going on. I'm currently working my way through Echoes and reading all the entries I can find.
When I played the Resident Evil games, I liked reading all the diaries and reports I found, too.
So, in games where you can get things that give you more of an insight into what's going on, do you read them?
