My vote: Malak from the first KOTOR. Lay down all your mines. Run around with Master Speed and kill his "batteries". Kite Malak to mines. BOOM. End of boss.
It really doesn't make you either, I beat him both with and without the mask and without its a genuinely fun, slightly challenging boss. Ack... on a more serious note, fighting King Dodongo (2nd boss of Ocarina of Time - aka the disappointingly easy, but still very good game) is like using a machine gun against a retarded kid in a wheel chair with one wheel. The other bosses, fair enough, but come on...
