I found the end battle for Knights of the Old Republic 2 to be almost insultingly easy and short. I know the end of the game was rushed by the developers to meet a deadline, but come on. At least give me SOME challenge. (And yes, I had the difficulty cranked.)

Boss battles?
The spider thing in Legend of Zelda: Ocarina of Time.
I do believe that was easy.

And Kirby, always the first boss tree thing.
And mini-bosses are ALWAYS easy.
Crystal Shards, first boss/mini-boss thing. Very easy.

Any boss in Zelda: Twilight Princess. Maybe not that skeleton head spinning thingy, though. I found that one quite entertaining.

EDIT: And Majora's Mask with Fiercy Deity Mask :)

Final Boss in Metal Gear Solid 2.
I beat him with just my bare fists, 3 times in a row.

Oh yeah, very easy boss battle.
Even with the diffiuculty cranked, it was easy, especially if you had the hang of the game.

Just like every boss in Soul Calibur series. Grab, grab, grab, grab.
Done.

Lord Lucien, Fable 2.

Hold A, attack. Win.

You don't even have to do that, wait long enough and Reaver (awesomeness) kills him.

When I played Jedi Outcast, fighting Desann at the end, I used force speed, at the highest level, jumped down towards him and hit him with a hard upper cut. Instant kill. I think I had realistic saber combat on though. That was the best cheat code EVER.

I would have to say that the final form of Sephiroth from FF7 would be the easiest. Technically just have to wait for him to attack, then you automatically omnislash him to death.

I thought Volf in Ninja Gaiden 2 was pathetically easy compared to even some of the minor enemies in that game. He was a six armed werewolf with a scythe! How could he be easy! Maybe he had four arms, I don't really remember, but still!
