You can find Indiana Jones in Morrowind if you look hard enough, though honestly I was more interested in trying to track down the level 99 werewolf that runs around Solthsteim.
Also, easter eggs are hidden little extra bonuses, tucked off to the side somewhere that most people won't ever find. When someone says something funny in a conversation that references pop culture, that's an reference, not an egg. FYI.

When you are at the Dwarf city bit and have chosen a king, either one of their cryers will say something and then say "EPIC FAIL" no seriously they do.

There's a Star Wars easter egg in morrowind. In one ice cave there's a skeleton hanging upside down reaching for a sword just out of his reach.
Like Luke Skywalker reaching for his lightsaber on Hoth.
Also, (I'm not entirely sure about this but it seemed like too much of a coincidence) In Shivering Isles, the tree like things called Gnarls drop an item called Gnarl Bark. Like the band Gnarls Barkly.

In God of War 1, there was a statue at the end of the game that you could destroy with a special jump attack..

In Dark Forces on the ice level you can reveal a certain part of the map that looks like Max from the Sam & Max games.
I'm inclined to say the "REX" appearances in the Halo games, and after that some of the combat dialog, there are some real gems in there if you listen enough. I can't seem to think of seeing any easter eggs in other games... the best one I can seem to think of that I heard about is where someone in a Quintet/Enix game says they're working on Illusion of Gaia 2, and my favorite references would probably Castlevania referencing earlier games in the series with similar locations (OK they could be the same) and reworked songs, and I would probably be remiss not to at least mention the cow level (which I know about even though I've never played a Diablo game).

I'd go with the statue of liberty in GTA IV. Now, I'm not gonna spoil here, but anyone who hasn't been inside that statue should do it now.

My favorite are probably either in San Andreas ("Sprunk Taste of things to come" turns into something else later when you smash the part of the sign that says "things to") or Fallout 3 (I just loved finding Mel Gibson... and selling him into slavery).
MW2 there is a hotel in the Karachi map called Kashmir or something, which is one of my nicknames in real life, unintended easter eggs for the win!
