No, they are not one continuous story, per se. They are all set in the same fantasy world, just at different frames in time, and they all have self-contained stories. That doesn't stop later games in the series referencing events from earlier games, but you should be able to jump in and not be too confused. Mainly, the whole point of the games are exploration, and Bethesda usually plays to that strength. Sure, they have main quests and side quests, but they all serve to help you explore more of the world. If you like exploring, you will probably like the games, since that really is the main point.
It is about deciding what you want to do, I owned Oblivion for 5 years until I even beat the main story. The games really aren't about their story though; you are not forced to do anything the game quite literally sets you in a Medieval landscape and lets you go nuts exploring hundreds of hours of content at your own pace.
They're big, open RPGs for you to do stuff in. Anything you want, really. I know people that stopped playing because they got lost and couldn't decide what to do next (usually Morrowind).
As for the story, you don't really need to worry about that. While the Elder Scrolls universe has a lot of history and lore, it's not necessary to know it before playing any of the games. The events of the previous games are barely touched upon in subsequent titles, because that's not what the plot of that particular game is about.
For example, in Oblivion, people would occasionally mention things about the events of Morrowind in passing despite the fact that the information had hardly anything to do with the game.

I never got into Oblivion (Never tried Morrowind) but Skyrim likes like it will be different... Much different... You know, because of the FUCKING. DRAGONS!

Sure, you might miss out on some cameos in the form of items or names, but those are just there to make older fans go "ooohh that's from Morrowind!"
As for the plot of Skyrim on it's own; I don't know much details, but if it's anything like it's previous games.
*There is a main story line, one you can or can't do when ever you please.
*Several bigger story lines as side quests.
*Simple smaller stories as side quests.
*The 4 guilds have their own main story line you can follow.

Anyway the plot is anyone's guess. Oblivion was all about the Oblivion crises and this one is about dragons invading Skyrim. All I know is I'm excited.
