Explain gaming to a non-gamer

Show them Black Ops 2, and tell them it's pretty much a Tom Clancy novel that you can play.

I'd start them off at Call of Duty because it's popular and easy to get into, then move them to some more complicated games depending on what they like.

Remember that these people do not understand how to move in 3d space. You cannot assume that they can move and look at anything at the same time.

OT: I'd say something like Bastion is good because it has simple movement mechanisms and a narrative style that draws the player along.
