Zelda: OoT's Fire Temple comes to mind. It's got some huge sprawling areas that are especially nice to look at in the steamy filter that permeates the entire level. I also managed to get the original version that has the holy chant.

I always loved some of the great level designs and music from the first 2 Megaman X games- Magna Centipede's computer center actually introduces some modicium of stealth into the series that forces you to use the background layers to hide. Plus, there's a spot where the number of times you are detected affects how strong and fast the 2nd Mini-Boss is. That one and Crystal Snail's cave had amazing visuals for their time.

Warcraft 3 had so many absolutely epic levels, like the one where you had to kill 100 villagers before the enemy did, or the tug of war level where you only controlled your heroes during a huge battle, or that epic final battle in the night elf campaign.
my favorites were the truly near impossible ones in the expansion pack:
the 1st mission in the undead campaign where you had to defend 3 exits and prevent the peasants from escaping
and the last mission in that campaign where you had to open the 4 portals, damn that was the hardest battle in any video game i ever played.

HL: We've got hostiles, trip-mines and radio squawks really built the tension before you get your first glimpse of the soldiers.

Deus Ex: Hong Kong, after all the intense combat it was great to be in what seemed like a real living city.

There's a level in max payne 2 where you control mona sax, and have to cover max payne with your sniper rifle. i don't know the name of it, but i remember this part in particular:

Mona: "on three"
Mona: "one, two, three"
Max: "And he's off!" (runs out of his hiding spot)
Mona: "The crowd goes wild..."

I played this game years ago, but that quote is still on my mind

Also, oot's inside the great deku tree, rainbow ride and tick tock clock both from mario64, and metal harbor from sonic advenure 2

The mission in Bully where Jimmy was riding on the back of a bicycle and he had to use his slingshot to snipe away his attackers.

The level "Halo" in Halo 1, and in Halo 3. I just don't get that same sense of awe and majesty anywhere else. I also love the big "furball" between Hornets and Banshees in Halo 3's "Covenant" level.

Level 5 in RezHD, and the boss fight on Level 4. I literally shouted in delight the first time through each. (Though "fear is the mind-killer" does get a bit tired after a while... damned Bene Gesserit witches [http://en.wikipedia.org/wiki/Litany_against_Fear].)

"The Milkman Conspiracy" from Psychonauts. Made my brane hert guud. Also, "Goggalor". edited: er, I meant, "Lungfishopolis"...

The raid on Cydonia in X-Com.

There are probably many others, but I've run out of time to ponder them.

Yeah, I gotta say of all the games I've played "The Milkman Conspiracy" from psychonauts was my favorite level, I remember walking outside the door and I just started laughing seeing that spiraling street. Followed closely by "Black Velvetopia" because the atmosphere in that level is so fully defined and I just gotta thing for black lights and winding cramped city streets.

Murder of Crows from Hitman: Blood Money for the reason already mentioned above.
A Dance With The Devil " " " " Sharks, Immolation, bdsm, knife wielding showgirls, MP5 wielding bartenders dressed like Satan....Ah..Vegas.

Hmm... to be honest, probably the last level of Halo. The first one that is, not the third. You're in this building and it's crumbling down and really gives you the sense of danger. I loved how many of the elites and grunts didn't bother to shoot at you and just wanted to run away... Felt nice to run them over. Unfortunatly, that was probably the only part of the game i liked.

Yea, that was an amazing level. it was incredible with high explosive rounds in pretty much all of my weapons.
