Deus Ex's main title is very catchy, and really epic. I love playing it at high volume.

While the game's whole art style sucked, there was one track I did particularly like. It plays at the game's installation screen (on PC) and in one of the first areas. I'm still wondering how I can work it into the soundtrack of one of my videos.
I rather enjoyed it, surprisingly, though 90% of it was built with no purpose in mind except for the player to have to get past (no thought towards what real purpose it would pose). It was mind numbingly hard, which was one of it's other setbacks, but the metal songs helped to prevent things from getting boring, except versus the Dahaka, that was insane. The only battle that felt more ridiculous in it's successor, The Two Thrones, was the one versus the two black knights where only "stealth" kills worked. However I'm getting off topic...

are the unsung war soundtracks available for download somewhere?

I'm quite partial to the Opera from FFVI myself. It'll be great to hear it live with full orchestra and such.

Ecco the Dolphin, the CD version, had some really nice (if perhaps a bit dated) ambient new-agey sound. It stands on its own musically. And since it's redbook, it spun in my CD player for years.

Back in 1997, I took a summer vacation with some friends, went to Washington DC. We took a train to the Baltimore Aquarium, and while there, saw the dolphin show they had. I was pleasantly surprised when I realized the background music during the show was the main theme to Ecco The Dolphin. Someone working there had a clue.

My fiancee says when she was there a few years back, they still used the same music. I took the time to email the composer, Spencer Nilsen, at his website. I was curious if he knew the aquarium used the song - I wasn't trying to get them in trouble or anything, I just thought he'd think it was cool. Apparently he did, and he sent me a signed CD of the SEGA ECCO soundtrack!

Other cool soundtracks:
Streets of Rage 1&2, Yuzo Koshiro's 90s stuff had some nice dancehall techno sound.

MegaMan 2 and 3. Excellent stuff there. Primitive, sure, but great melody, really catchy.

Grim Fandango's on my Mp3 player. It's just so evocative of the influences behind the game.

The Westwood Blade Runner game had great music that really evoked the original Vangelis works. Sometimes, uh, just copying it, but still.

Outcast, while bombastic, had some really good stuff. Of course, it was the Moscow Philharmonic.

System Shock 2, again, great. A few themes repeated throughout, just good stuff.

Half-Life 1 was really good and suitably claustrophobic and alienated when it had to be.

The intros to the Fallout games, the use of the Ink Spots & Satchmo, that was PERFECT. The music in-game was really quiet and atmospheric, but it was nice.

My absolute favorite soundtrack would have to be Outlaws. I dare Morricone and spaghetti western fans to try to listen to this music without smiling.

I have to say that the menu music from Homeworld blew me away. The Baldur's Gate and Icewind Dale series also has fittingly heroic orchestral stuff.

In more recent games: TF2. Rhythmical, comical, and entertaining.

My favourite video game music ever is from Blast Corps for N64.
Not a big fan of the halo series, but it has some nice tunes (specifically peril from H2).
Propaganda from BG&E was excellent.

anything from C&C is great too.

The Soundtracks for most Sonic games. Particularly Sonic Adventure 2, and Sonic The Hedgehog for '360.

Not a giant fan of Halo music, but one track that's technically an Easter Egg in the first game still stands out in my mind. "The Siege of Madrigal" is the piano ballad that's hidden up on a ledge at the very end of the Control Room stage (you can only get to it by snatching one an enemy aircraft and then walking along a ledge). Bungie used to host a copy of it on it's site, but no longer, otherwise I would link to it, but I'm not sure of the legality of the issue now if they don't offer it anymore. It's a very slow, sad song that doesn't have a slew of instruments, and is in pretty sharp contrast to the majority of the songs that appear in Halo.

The opening of Metal Gear Solid 2 that runs like a movie trailer with music composed by Harry Gregson-Williams is also a great track in my mind, it's so cinematic, and really has his style.

The original Homeworld also had some great tunes, Adagio for Strings is used beautifully, but there are also some great middle-eastern sounding tracks and some very creepy music in a few areas. It really elevates the storytelling.

The Ace Combat series has already been mentioned, but Ace Combat 4 and Ace Combat 5 both had some great tracks in them. Most of them served as just decent backgrounds, but in some moments they really could help bring you into the already very solid games.

And finally...Total Annihilation on the PC. It's ten years old now, and you hear echoes of the soundtrack in this year's Supreme Commander (same composer), but the original score was great. These wonderful orchestral scores that could reflect the large scale battles that would often occur, but also great slow building up music at the start of games. I still know exactly how one of the battle scores goes. A great game and great music, when many strategy games were just doing generic rock music.

I really like the main theme for Halo, but I'm not a big fan of the games. I've only played the first one.

I love the soundtracks to Baldur's Gate, and Icewind Dale. I think Icewind Dale's soundtrack is Jeremy Soule's best work.

Jesper Kyd's work on the Hitman games is outstanding.

Legend of Zelda. Enough said.

Hell March from Red Alert, and most of the rest of the early C&C soundtrack, but Hell March is my favorite.

Final Fantasy crystal theme, and battle music. I'd love to have the victory fanfare as my ring tone like all the characters did in Advent Children.

Half Life 2 has some really good battle music that might not be amazing on its own, but fits the game perfectly.

The Witcher has a damn good score.

Morrowind, and Oblivion OST are both great.

And of course Still Alive from Portal.

I almost forgot! Street Fighter! For about ten years of my life I played Street Fighter almost incessantly so I can hear the music in my sleep even now.

The soundtrack to Medieval Total War 2 gets my vote.

Some of the music for the battles is superb.

Also old favourites like most of the Sonic series and DMC series.
